- 1 1/2 1/2 cups light brown sugar
- 3/4 cup canola oil
- 1 1/2 tsp vanilla extract
- 2 eggs
- 1 (15 oz) can pumpkin puree (not pumpkin pie mix)
- 3 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt 3/4
- 3/43 /4 tsp cinnamon
- 1/41 /4 tsp ground cloves
- 1/41 /4 tsp ginger
- 1/41 /4 tsp nutmeg
- FILLING
- 1 (8 0z) pkg of cream cheese, room temp
- 1/4 cup (1/2 stick) unsalted butter, room temp
- 1 tsp vanilla extract
- 4 1/2 1/2 cups confectioner’s sugar
Soprano's Sunday Gravy and Meatballs

To make the sauce, heat the oil in a large heavy pot over medium heat
- 2 tablespoons olive oil
- 1 lb meatypork neck bones or 1 lb pork spareribs
- 1 lb veal stew meat or 2 veal shoulder chops
- 1 lb Italian sausage
- 4 garlic cloves
- 1/4 cup tomato paste
- 3 (28 ounce) cans peeled Italian tomatoes
- 2 cups water
- 6 leaves fresh basil , torn into small pieces
- For the Meatballs
- 1 lb ground beef (or combination of beef or pork)
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 teaspoon finely minced garlic
- 1/2 cup freshly grated romano cheese or 1/2 cup parmesan cheese
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 1 teaspoon salt
- pepper
- 2 tablespoons olive oil
Pasta with sauteed Tomatoes, Olives and Artichokes

Heat oil in a large nonstick skillet over medium-high heat
- 1 teaspoon olive oil
- 2 cups halved cherry tomatoes
- 1/2 cup thinly sliced pitted kalamata olives
- 1 (14-ounce) can quartered artichoke hearts, drained
- 2 cups of mushrooms
- 1 whole small onion
- 2 pieces garlic
- 2 cups of sautéed spinach
- 4 cups hot cooked ziti (short tube-shaped pasta)
- 1/2 cup chopped fresh basil
- 1/3 cup (1 1/4 ounces) shredded Asiago cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- pinch of red pepper
BOSTON BAKED BEANS

Soak beans overnight in cold water
- 2 cups navy beans
- 1/2 pound bacon
- 1 onion, finely diced
- 3 tablespoons molasses
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dry mustard
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup brown sugar
EASY BAKED BEANS

- 1 pound bacon
- 2 (28 ounce) cans baked beans
- 1 (12 ounce) bottle chili sauce
- 1 large sweet onion, chopped
