When it comes to pie, I always save the crust for last
- 12 tablespoons (1 ½ sticks) unsalted butter, very cold
- 1 1/2cups (192 grams) all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt, plus a tiny pinch
- 1/4 cup very cold water, plus more as needed
- 1 large egg
- 3 tablespoons turbinado sugar, plus more as needed
Vietnamese Style Lamb Riblets w/Dipping Sauce

The riblets can be roasted, cooled, and refrigerated up to 2 days ahead
- 1 Tbs. grated fresh ginger
- 1 Tbs. whole coriander seed, toasted and coarsely ground
