Smoked Salmon Loaf

In small bowl, combine 8 oz
- 3-8oz packages cream cheese, softened
- 1/2 c. finely chopped red onion
- 2 Tbsp. capes, drained and chopped
- 2 Tbsp. fresh dill, finely chopped, plus more for garnish
- 1 tsp. freshly squeezed lemon juice
- Coarse salt and fresh ground pepper
- 2 loaves pumpernickle bread (I use cocktail rye), cut into 16 half inch slices, with crusts
- 1 lb. smoked salmon, thinly sliced
- 1 1/2 seedless cucumbers, thinly sliced into 1/8” slices, patted dry, plus more for decoration
- 1/2 c. crème fraiche
- 2 1/2 oz. salmon roe (I don’t use)
- 1 oz. black caviar (ditto)
- Lemon wedges for garnish

- 2 large butternut squash (5 1/2 pounds), halved lengthwise and seeded
- 1 tablespoon extra-virgin olive oil
- 3/4 cup pecans (2 ounces)

- 1 large onion, cut into 1/2-inch dice
- 1 small fennel bulb—halved, cored and cut into 1/2-inch dice
- One 1 1/2-inch piece of fresh ginger, peeled and finely chopped

- One 14-ounce can of unsweetened coconut milk
- 3/4 cup chilled heavy cream
