Banana Oatmeal Cups with Chocolate Chips

- 3 mashed bananas (the more ripe the better!)
- 1 cup vanilla Almond milk (you could use skim but you may want to add a little sweetener)
- 2 eggs
- 1 tbsp Baking powder
- 3 cups (240g) Old Fashion or Rolled Oats
- 1 tsp vanilla extract
- 3 tbsp (42g) mini chocolate chips

Vindaloo-Spiced Chicken Thighs with Coconut-Tomato Stew

Place the chicken thighs in a bowl and season with the 1 tsp
- 8 boneless, skinless chicken thighs
- 1 tsp. plus 2 Tbs. curry vindaloo
- 1 tsp. plus 1 Tbs. kosher salt
- 2 yellow onions, diced (about 2 cups)
- 1 large tomato, diced (about 1 1/2 cups)
- 4 garlic cloves
- 1 Tbs. minced fresh ginger
- 1/4 cup vegetable oil
- 1 1/2 lb. russet potatoes, peeled and cut into large dice (about 2 cups)
- 1 Tbs. tomato paste
- 1/4 cup Champagne vinegar
- 1 Tbs. firmly packed light brown sugar
- 1 Tbs. honey
- Juice of 3 limes
- 1 cinnamon stick
- 1 cup coconut milk
- Steamed basmati rice for serving
- 1/4 cup fresh cilantro leaves

- 100 g natural coconut flakes
- 100 g walnuts
- 30 g almonds
- 30 g chia seeds
- 1 teaspoon ground cinnamon

- 2 (15-ounce) cans black beans, rinsed and drained
- 3 ears fresh corn, cooked, cooled and kernels cut off the cob
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 2 tablespoons shallots, minced
- 2 teaspoons salt
