To make vinaigrette, combine raspberries, balsamic vinegar and olive oil in a blender

- 1/3 cup balsamic vinegar
- 2/3 cup extra virgin olive oil
- 10 cups mesclun greens
- 2 medium fennel bulbs, thinly sliced
- 2 cups dried cranberries
- 8 to 10 clementines or 4 to 5 oranges, peeled and separated into segments
- 1 cup spiced pecans or caramelized walnuts

- 100 g of dessicated coconut
- 110 g of shelled pistachios
- 150 g of almond meal
- 4 “generous” tbls of butter…which is to say, keep adding more butter till you get a nice gooby consistency
- Then the filling:
- 2-3 boxes (250g each) of Philadelphia cream cheese
- one egg
- a dash of natural vanilla essence or vanilla powder
- 2 tbls of natural yogurt
- 1/4 cup coconut cream
- 1/2 cup-ish of rice syrup (or add more/less to your individual taste). And, yes, rice syrup is fructose-free.
The Best Blueberry Muffins

Very tasty
- 1/2 cup butter or 1/2 cup margarine, at room temp
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 1/2 cups fresh blueberries or 2 1/2 cups frozen blueberries
- 2 cups all-purpose flour
- 1/2 cup milk
- 1 tablespoon granulated sugar, mixed with
- 1/4 teaspoon ground nutmeg

Shake all the ingredients in a cocktail shaker with ice and strain into a martini glass

- Splash of cream (or substitute a splash of orange juice)

(Frozen hot chocolate) (Makes 1 reeeaally big serving)
- 1 cup non-dairy milk (at least 1/3 cup as lite or full-fat canned coconut milk if you want a truly-rich treat)
- 2 T cocoa powder (10 grams)
- scant 1/16th tsp salt (do not omit this)
- 1/2 tsp nunaturals stevia or 1 tablespoon agave, maple syrup, or sugar (or more, if you have a sweet tooth)
- Optional: for an even richer flavor, try adding a little melted chocolate (Serendipity’s recipe calls for this) or chocolate syrup

- 6 mini Portabella mushrooms (or 2 large Portabella mushroom caps)
- 1/2 cup marinara sauce (if all you have is a tomato, you can try my Xed Pizza Sauce)
- 1/2 oz. turkey pepperoni (approx. 6 slices)
- 2 oz. black olives
- 3 oz. low-fat Mozzarella cheese

directions 1. Trim fat from meat
- 2 1/2 - 3 pound boneless pork shoulder roast
- 1 cup chopped onion (1 large)
- 3/4 cup chopped green sweet pepper (1 medium)
- 1 teaspoon dried thyme, crushed
- 1/2 teaspoon dried rosemary, crushed
- 1/2 cup chicken broth
- 1 cup balsamic vinegar
- 3/4 cup ketchup
- 1/3 cup packed brown sugar
- 1/4 cup honey
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon-style mustard
- 1 clove garlic, minced
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 20 cocktail-size hamburger buns or small round dinner rolls, split and toasted
- Deli coleslaw
- Sweet or dill pickles, coarsely chopped
- nmeat mixture onto bun bottoms. Top with coleslaw and pickles. Add bun tops.

- 1/2 ounce Grand Marnier (some people recommend amaretto instead – it’s also much cheaper than GM!)
