Preheat oven to 400. Lightly spoon flours into dry measuring cups, level with a knife
- 1 c all-purpose flour
- 1/3 c whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c walnuts, coarsely chopped
- 2/3 c packed light brown sugar
- 1/2 tsp ground cinnamon
- 1 tsp fresh ginger, grated
- 2 Tbsp oil
- 2 tsp vanilla extract
- 8 oz plain fat-free yogurt
- 1 egg
- 1-1/2 c pear, peeled and finely chopped
- cooking spray
- 3 Tbsp turbinado sugar (Sugar in the Raw)
Tingly Szechuan Pepper Beef Noodles

Brin a large pot of water to a a boil
- Salt
- 1 lb Chinese noodles or thin spaghetti
- 3 Tbsp vegetable oil
- 1 lb ground beef
- 1 onion, finely chopped
- 1 small red chile, such as finger or Fresno, minced
- 4 large cloves garlic, minced
- 1-inch piece fresh ginger, peeled and minced
- 2 tsp ground Szechuan peppercorns
- 1 tsp Chinese five-spice powder
- 1/4 - 1/3 c tamari (dark soy sauce), or liquid amino, such as Bragg
- 2 c shredded iceberg lettuce
- 1 bunch scallions, thinly sliced on an angle
- Sriracha or chile oil, for serving
Frenchs Crunchy Onion Chicken

1. Marinate chicken with onions, garlic, salt and pepper
- 1 small onion , minced
- 3 garlic cloves , minced
- salt & pepper , to taste
- 1 1⁄3 cups French's French fried onions , crushed
- 1 lb boneless skinless chicken breast , thin sliced
- 1 egg , beaten
Grilled Chicken and Sweet Potatoes with Strawberry Salsa

Preheat a grill to medium
- 4 small sweet potatoes
- 2 Tbsp extra-virgin olive oil, plus more for the grill
- Kosher salt and freshly ground black pepper
- 3 skinless, boneless chicken breasts (about 8 oz each)
- 1 tsp ancho chile powder
- 1/2 tsp ground cumin
- 8 strawberries, finely chopped
- 1 jalapeño pepper, finely chopped (leave in seeds for heat)
- 2 scallions, chopped
- 1/2 c chopped fresh cilantro
- Juice of 1 lime, plus wedges for serving

In a small bowl, combine all of the dressing ingredients
- Dressing:
- 1 cup sour cream
- 1/4 cup ketchup
- 2 tablespoons dill pickle relish
- 1 tablespoon lemon juice
- 1 teaspoon hot sauce, such as Tabasco

- Patties:
- 1 1/4 pounds ground dark and white meat turkey
- 3 tablespoons grated onion (grate over the turkey to catch the juices)

Butternut Squash Alfredo

Melt butter in a large skillet, add diced onion, rosemary and sage
- 4 Tbsp butter
- 1 c diced onion
- 1 Tbsp fresh rosemary
- 1 Tbsp fresh sage
- 3 c diced butternut squash
- 1 c vegetable stock
- 4 c milk, divided
- 1 c grated Parmesan cheese
- 2 Tbsp brown sugar
- 1/4 tsp nutmeg
- salt and pepper to taste
- 2 c water

- Tartar Sauce:
- 1 cup mayo or Vegenaise
- 1/2 lemon, juiced
- 3 tablespoons finely chopped cornichons or pickles
- 2 tablespoons grated shallot
- 2 tablespoons capers, chopped
- 2 tablespoons fresh chopped dill
- 2 tablespoons finely chopped flat leaf parsley

Asian Pork & Noodle Skillet

Combine meat with sesame oil, Asian seasoning mix and 2 of the instant noodle seasoning packets, mix well
- 2 medium carrots, peeled & julienned
- 1 medium red bell pepper, sliced
- 5 -6 green onions with tops, sliced
- 2 lbs pork tenderloins or 2 lbs chicken, sliced into thin strips
- 2 Tbsp sesame oil
- 2 Tbsp Asian seasoning, mix
- 4 packages oriental-flavor instant ramen noodles
- 1 Tbsp oil
- 4 cups water
Green Bean Casserole
