When my son Cameron was younger, this was the only pizza he would eat

  • Pizza Dough:
  • Flour, for the dough
  • 12 ounces (1/2 recipe) pizza dough
  • 2 tablespoons pesto
  • 2 oven-dried tomatoes, cut into thin slices
  • 1 cup mozzarella, grated
  • 3/4 cup Fontina cheese, grated
  • 2 Roma tomatoes, ends trimmed and cut into 12 slices total
  • 2 ounces goat cheese, crumbled
  • 1 teaspoon fresh oregano leaves, chopped
  • 1 teaspoon fresh thyme leaves, chopped
  • 2 tablespoons freshly grated Parmesan
  • 6-8 large fresh basil leaves
  • One 1/4-ounce package dry active yeast
  • 1 teaspoon honey
  • 1 cup warm water, 105-115 degrees
  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 tablespoon extra-virgin olive oil, plus more for brushing

  • 3 tablespoons fresh lemon juice

  • 1 1/2 tablespoons agave nectar or honey
  • Kosher salt and freshly ground black pepper
  • 2 cups store-bought tortilla strips, such as Mission Restaurant-Style

  • 1 lb ground pork
  • 4 large napa cabbage leaves, minced
  • 3 stalks green onions, minced
  • 7 shitake mushrooms, minced (if dried – rehydrated and rinsed carefully)
  • 1/2 cup bamboo shoots, minced
  • 1/4 cup ginger root, minced
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp corn starch
  • OR
  • Shrimp Filling:
  • 1/2 lb raw shrimp, peeled, deveined, and coarsely chopped
  • 1/2 lb ground pork
  • 3 stalks green onions, minced
  • 1/4 cup ginger root, minced
  • 1 cup water chestnuts, minced
  • 1 tsp salt
  • 3 tbsp sesame oil
  • 2 tbsp corn starch
  • Dough:
  • Note: you will want to double this for the amount of filling listed – I just tend to use leftover pork filling for soup meatballs. A single batch will yield about 40 dumplings depending on size.
  • 2 cups all-purpose flour
  • 1/2 cup warm water
