No-Knead Crusty White Bread

The most basic of all no-knead loaves, this is a wonderful way to get into yeast-bread baking
- 3 cups lukewarm water
- 6 1/2 to 7 1/2 cups King Arthur Unbleached All-Purpose Flour*
- 1 tablespoon salt
- 1 1/2 tablespoons instant yeast
Mashed Potatoes “Chantilly"

1. Preheat the oven to 375F
- Equipment
- 13 by 9 by 2" baking dish
- Ingredients
- 41/2-5 pounds Idaho Russet potatoes, peeled and cut into 1" chunks (Note: please make sure the potato chunks are all relatively the same size to assure even cooking time)
- Kosher salt to taste
- 3/4 cup whole milk
- 1 stick butter, cut into slices, plus 1 additional tablespoon butter for greasing the baking dish
- 1 tablespoon unseasoned breadcrumbs
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
The Quickie Tomato Sauce

Makes about 3 1/2 cups, enough for 1 pound of pasta
- 1 tablespoon extra-virgin olive oil
- 1 (28-ounce) can imported whole Italian plum tomatoes, broken up with their juices
- 1/4 cup tomato paste
- 2 tablespoons chopped fresh basil
Hazelnut-Pesto Turkey Breast

- 4 cups apple or cherry wood chips
- 1/4 cup chopped hazelnuts or almonds, toasted
- 1 egg yolk
- 1 cup loosely packed fresh spinach leaves
- 1 cup loosely packed fresh basil leaves
- 1 tablespoon hazelnut oil, almond oil, or cooking oil
- 1 clove garlic, minced
- 1/4 cup grated Parmesan or Romano cheese

Giant Vanilla Sugar Cookies

These sugar cookies are superb
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup vegetable oil, such as canola or sunflower oil. I used almond oil.
- 1/2 cup granulated sugar, plus additional for sugaring tops
- 1/2 cup powdered sugar
- 1 large egg
- 2 teaspoons vanilla extract, or the seeds of 1 vanilla bean
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
