- 1 teaspoon dried oregano (preferably Greek)
- 1 teaspoon coarse salt (kosher or sea) or more to taste

- 1/2 pound goat cheese
- For serving:
- 4 pita breads
- 4 rinsed romaine lettuce leaves
- 4 paper-thin slices red onion (optional)
- 1 medium-size cucumber, peeled and thinly sliced
- 1 medium-size ripe tomato, thinly sliced

- 1 medium-size cucumber
- 1 clove garlic, minced

Chicken & Vegetable Quesadilla

A fun and easy-to-make recipe that can easily be topped with guacamole if your kids like it
- For the chicken:
- 1/3 cup olive oil
- 3 tablespoons lime juice
- 1 tablespoon jalapeño, chopped
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon salt
- 2 chicken breast halves, boneless, skinless, grilled or broiled, and sliced into thin strips
- For the salsa:
- 4 Roma tomatoes
- 1 large red bell pepper
- 1 poblano chile
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons scallion, chopped
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- For the quesadillas:
- 8 large flour tortillas
- Extra-virgin olive oil
- 2 cups Monterey Jack cheese, grated
- Roasted tomato and pepper salsa (see above)
- Sour cream and cilantro sprigs, for garnish
Egg Rolls

Get a deep pan/wok. Put a bit of oil in it
- 2 pack of frozen egg roll wrappers, make sure its the thin kind not that thick crap they sell at the regular supermarkets. If you have a local Asian Store, go there and get the red pack that says "MenLo" if not, just use what you can get.
- A pound of ground chicken or pork
- 1 head of regular cabbage ( shredded )
- 2 lrg carrots (grated)
- 2 stalks green onion ( thin sliced)
- 1-2 tbs chopped garlic
- 2 tbs salt
- 2 tbs pepper
Salsa

Cook jalapenos in water for about 30 minutes
- 1 to 3 fresh jalapenos (adjust to desired hotness, I use 1)
- 1/2 cup chopped green onions
- 2 16-oz cans whole or diced tomatoes
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
BBQ Pulled Pork with Carolina Sauce

For the sauce: Combine all the ingredients in a stainless steel saucepan over medium heat
- Carolina BBQ Sauce:
- 2 quarts cider vinegar
- 1/2 quart ketchup
- 1/8 cup red pepper flakes
- 1/2 cup sugar
- 1/2 quart water
- 1/4 cup dry mustard
- 1/4 cup Worcestershire sauce
- 1/4 cup molasses
- 1/4 cup tomato paste
- 1/4 cup soy sauce
- 1/8 cup salt
- Pinch freshly ground black pepper
- BBQ Pulled Pork:
- 2 gallons water
- 1 1/2 cups salt
- 2 cups soy sauce
- 1/4 cup honey
- 1/4 cup molasses
- 1/2 cup sugar
- 2 pork butts, about 6 pounds total weight
- Salt and freshly ground black pepper
- 1 1/2 cups applewood chips, soaked
Grilled Glazed Salmon
