Savory Beet Soup

This is designed to be made in your Blendtec blender using either the FourSide Jar or WildSide Jar
- 1 tsp coconut oil
- 1/4 onion, roughly chopped
- 1 clove garlic, quartered
- 1 c vegetable broth, or chicken broth
- 1 c lite coconut milk
- 3/4 tsp salt
- 1/4 tsp ground black pepper
- 2 c beets, steamed
Baked Orange Chicken Meatballs

Preheat the oven to 500ºF
- For the Meatballs:
- 1/4 cup milk
- 1/4 cup Panko breadcrumbs
- 1 1/2 pounds ground chicken (See Kelly's Note)
- 2 cloves garlic, minced
- 2 teaspoons minced fresh ginger
- 2 Tablespoons minced scallions
- 2 Tablespoons low sodium soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- For the Sauce:
- 1 1/2 teaspoons sesame oil
- 1 1/2 teaspoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon minced fresh ginger
- 1 1/2 teaspoons crushed red pepper flakes, or more to taste
- 3/4 cup orange marmalade
- 1/4 cup hoisin sauce
Brian's Salsa

This is for guys who don't like chunks of tomato in their salsa
- 2 8-oz cans tomato sauce
- 8 ounces water, approx.
- 1 medium onion
- 1 clove garlic
- 3 green onions
- 2 to 6 slices pickled jalapeno chilies, to taste
- juice of one lemon (approx. 1/4 cup)
- salt and pepper to taste
Honey Pecan Crusted Chicken with Barbeque Dipping Sauce

1. Preheat oven to 350 degrees F
- 4 boneless, skinless chicken breasts
- 2 Tbsp. honey
- 2 Tbsp. Dijon mustard
- 1/4 cup chopped pecans
- 3/4 cup cornflake crumbs
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- Olive oil spray
- 1/2 cup catsup
- 2 Tbsp. brown sugar
- 1 Tbsp. Worcestershire sauce
Breakfast of Champions Sandwich

Separate the halves of the English muffins and spread them with some of the butter
- 6 whole wheat English muffins
- 1 stick butter
- 6 thin slices ham
- 6 medium eggs
- Salt and ground pepper

- Creamy Raspberry Frosting:
- 3/4 cup butter
- 3 eggs
- 1 3/4 cups all-purpose flour

- 1/4 teaspoon salt
- 1 1/2 cups sugar
- 2 teaspoons finely shredded lemon peel
- 2 tablespoons lemon juice

- 2/3 cup buttermilk or sour milk*
- Red food coloring
- 1 recipe Creamy Raspberry Frosting
- Thin lemon wedges (optional)

- 7 - 7 1/2 cups powdered sugar
- 3 tablespoons milk
- 3 tablespoons raspberry liqueur or milk
- 5 drops red food coloring
