Chile Verde Potato Stew

The best stew ever, and it makes a mean burrito filling
- 1 to 2 lbs pork meat
- 1 to 2 lbs stew meat
- 1 cup uncooked, soaked cannellini beans
- 1/2 cup fresh ground farro flour (or any other kind of whole grain flour)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 cup olive oil
- 1 yellow onion, chopped
- 4 cups water
- 1 container Baca's frozen mild green chilies or large can of green chilies, chopped
- 28 oz La Victoria green enchilada sauce
- 4 garlic cloves, minced
- 1 Tablespoon cumin
- 1 bunch cilantro, chopped, added after cooking, chopped
- 4 jalapenos, seeded and chopped
- 4 large potatoes, peeled, and diced in 1/2 inch cubes
- Salt and pepper to taste
Pork and Mushroom Stew

When time is limited, pork tenderloin is an ideal option for stews
- HEAT:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 1⁄2 pounds pork tenderloin, trimmed, cut into 2-inch pieces, dried with paper towels, seasoned with salt and black pepper
- SWEAT:
- 8 ounces cremini mushrooms, quartered
- 1 ⁄2 cup sliced leeks or shallots
- 1 ⁄2 cup diced carrot (1 carrot)
- 2 tablespoons all-purpose flour
- DEGLAZE:
- 1 ⁄4 cup dry sherry or white wine
- 3 ⁄4 cup apple cider or juice
- 3 ⁄4 cup low-sodium chicken broth
- Salt and black pepper to taste
- GARNISH:
- Diced Granny Smith apple
- Fresh thyme sprigs
Homemade Vanilla Bean Coffee Creamer

Soft Molasses-Raisin Cookies

- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1 cup raisins, golden or regular
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- heaping 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 3/4 cup coarse white sparkling sugar, for coating; optional
No-Knead Crusty White Bread

- 3 cups lukewarm water
- 6 1/2 to 7 1/2 cups King Arthur Unbleached All-Purpose Flour*

Spicy Tomato and Sweetcorn Soup

- 6 tomatoes, halved
- 1 red onion, cut into 8 wedges
- 2 long red chilies, halved lengthwise + seeds removed
- 1/4 cup extra virgin olive oil
- 5 cloves garlic, finely chopped
- 3 cups vegetable stock
- 2 bay leaves, fresh or dried
- 1 chipotle in adobo sauce, roughly chopped
- 3 corn cobs, kernels shaved off with a sharp knife
- 2 tablespoons tomato paste
- Fine sea salt + freshly ground black pepper

- 2 tablespoons ice water

- LEMON PIE FILLING:
