Buttermilk Cluster

These rolls make a beautiful compliment to anyone's Thanksgiving table
- Glaze:
- 6 to 6 1/2 cups (750 grams) bread or all-purpose unbleached flour
- 1/2 tablespoon salt
- 1 envelope (2 1/2 teaspoons) active dry or instant yeast, or 1 15 gram cake fresh yeast
- 1 tablespoon warm water
- 1 3/4 to 2 cups buttermilk
- 1 tablespoon honey
- 1 egg beaten with 1 teaspoon water
- Topping:
- 1-2 tablespoons seeds (poppy, sesame) or grains (cracked wheat, rolled oats)
Seeing Red Bundt Cake

Make the cake: Preheat the oven to 350 degrees
- Cake:
- 1/2 cup unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 large eggs
- 2 tablespoons red food coloring
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon distilled white vinegar
- Frosting:
- 8 ounces cream cheese, at room temperature
- 1/2 cup unsalted butter, at room temperature
- 1 pound confectioners' sugar
- 1 teaspoon vanilla extract
Fried Fish Sandwich

Fill a Dutch oven halfway full with oil and heat to 350 degrees F
- Lemon Tarragon Tartar Sauce:
- Vegetable oil, for frying
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon kosher salt
- One 12-ounce bottle amber beer, such as Dos Equis
- 2 teaspoons hot sauce, such as Tabasco
- Two 6-ounce tilapia fillets, cut in half
- Kosher salt and freshly ground black pepper
- Lemon Tarragon Tartar Sauce, recipe follows
- 4 soft potato rolls, such as Martin's
- 1 head green leaf lettuce
- Lemon wedges, for serving
- 1 cup mayonnaise
- 2 tablespoons minced bread and butter pickles
- 2 tablespoons minced scallions
- 1 tablespoon capers, drained and coarsely chopped
- 1 tablespoon minced fresh tarragon
- 1 teaspoon stone ground mustard
- Zest of 1 lemon
- Juice of 1/2 lemon
- Kosher salt and freshly ground pepper
Cream Cheese Stuffed Strawberries

- 2 (8 ounce) packages cream cheese, softened
- 6 T powdered sugar
- 2 T orange juice (fresh, or from a bottle)
- 1 C cool whip

- 1 tbsp. chili powder, plus 1 tsp.

Easier Fried Chicken

- 1 1/4 cups buttermilk
- Table salt
- Dash hot sauce
- 3 teaspoons ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 3 1/2 pounds bone-in, skin-on chicken parts (breasts, thighs, and drumsticks, or a mix, with breasts cut in half), trimmed of excess fat (see note)
