MASHED SWEET POTATOES WITH ORANGE ESSENCE

Steam potatoes in a large covered pan fitted with a steamer basket until they are tender, about 8 minutes
- 2 lbs. sweet potatoes, peeled, large dice
- 1/4 cup buttermilk, warmed slightly {8.5oz}
- 1/4 cup orange juice {2oz}
- 2 teaspoons orange zest
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 tablespoon unsalted butter, opt
TERIYAKI SAUCE MARINATE {dee white}

Marinate at least 2 hours

- 1/2 cup soy sauce {4oz}
- 1/2 cup pineapple juice {4oz}
- 1/4 teaspoon white pepper
- 1 teaspoon ground ginger
- 1/4 cup brown sugar {2oz}
- 2 teaspoons oil
- 2 cloves garlic, pressed
- 2 teaspoon dry sherry
- 1 cup pineapple juice {8oz}
- 1 cup soy sauce {8oz}
- 1/2 cup dark brown sugar {4oz}
- 1/2 teaspoon fresh grated ginger
- 1/2 cup cold water
- 1/2 teaspoon garlic powder
- 1 teaspoon gin or rum
- 2 teaspoon cornstarch
SALMON SALAD SANDWICH {eating well}

Combine salmon, onion, lemon juice, oil and pepper in a medium bowl
- 12-14 oz. BS salmon, drained
- 1/4 cup minced red onion
- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon freshly ground pepper
- 4 tablespoons low-fat cream cheese
- 8 slices pumpernickel bread, toasted
- 8 slices tomato
- 2 large leaves romaine, cut in half
SLOW-ROASTED TOMATOES

- 6 medium vine tomatoes, sliced 1/4” thick
- 2 shallots, thinly sliced
- 1 small bundle of thyme, about 5-6 sprigs
- 1/4 cup olive oil
- 1/4 teaspoon coarse salt

Mix all ingredients in a bowl and refrigerate 1 hour
- 2 cans black beans, drained
- 1 can corn, drained
- 2 Roma tomatoes, diced
- 1/4 cup diced red bell pepper

- 1/4 cup diced pineapple
- 1 tablespoon chopped cilantro leaves
- 1 jalapeno, seeded, minced
- 4 tablespoon sherry vinegar
- 1/2 lime, juice of

- 1 tablespoons salt
- 1 teaspoon black pepper
- 1 Pinch ground cumin
HOT BUTTERED RUM MIX

- 2 cups Elbow Macaroni, Uncooked
