Pumpkin Apple Cakes

Bring butter or margarine and eggs to room temperature
- 1/2 cup butter or margarine
- 2 eggs
- 1 1/2 cup granulated sugar
- 1 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1 cup canned pumpkin
- 1/2 cup apple juice
- 1 1/2 sifted powdered sugar
- 1 to 2 tbs milk

- Always beat eggs before adding sugar.
- Combine dry ingredients together when baking.
- to flour and milk to egg mixture alternately, beginning and ending with the flour mixture. This will make for a lighter cake, muffin or biscuit.
- To to the odor from collard greens being cooked, add one washed un shelled pecan to the collards pot before turning the stove on.

Streusel Coffee Cake

Beat 1 1/2 cups cake mix, yeast, flour, eggs, and water with mixer for 2 min
- 1 box yellow cake mix
- 1 package yeast
- 1 cup flour
- 2/3 cup warm water
- 2 eggs
- 5 tbs margarine melted and cooled
- 2 tbs sugar
- 1 can pie filling
Pea Picken Cake

Double cake part and bake at 350*
- Icing:
- 1 yellow cake mix
- 3 eggs
- 1/2 cup oil
- 1 can mandarin oranges
- 12 ounce whip cream
- 1-20 ounce crushed pineapple
- 1 package instant pudding [don’t make add dry] mix all together.
Ginger Cookies

Mix all ingredients together and chill for 3 hours
- 1 cup shortening
- 1 cup sugar
- 1 egg
- 1 tsp cinnamon
- 1 tsp cloves
- 1 cup molasses
- 2 tbs vinegar
- 5 cup flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbs ginger
Pumpkin Bars

Heat oven to 350*. Grease jelly roll pan, 15 1/2x10 1/2x1 inch
- Cream cheese frosting:
- 2 cups sugar
- 1/2 cup vegetable oil
- 1-16 ounce can pumpkin
- 4 eggs beaten
- 2 cups Bisquick baking mix
- 2 tsp ground cinnamon
- 1/2 cup raisins
- 1-3 ounce package cream cheese softened
- 1/3 cup butter or margarine softened
- 1 tbs milk
- 1 tsp vanilla
- 2 cups powdered sugar
- Beat cream cheese, margarine, milk and vanilla until creamy. Stir in powdered sugar and smooth.
Lemon Bars

Crust: Using pastry cutter, combine powdered sugar, flour and margarine until crumbly
- Crust:
- 1/2 cup powdered sugar
- 2 cups all purpose flour
- 1 cup margarine
- Filling:
- 4 eggs
- 2/3 cups lemon juice
- 1 1/4 cups [ 14 ounce can] carnation sweetened condensed milk
- 1 tbs flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 drops yellow food coloring
- 1 tbs grated lemon zest
- Powdered sugar optional fresh berries or lemon twist for garnish
Golden Lemon Pound Cake

Heat oven 325* Combine sugar and butter beating until fluffy, add eggs one at a time until well mixed
- Cake:
- 2 cup sugar
- 1 cup butter
- 4 eggs
- 3 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup buttermilk
- 1 tbs grated lemon peel
- 1 tbs lemon juice
- Glaze:
- 1 1/4 cup powdered sugar
- 2 tsp lemon juice
- 1-2 tbs milk
Butterscotch Cookies {Aunt Margies}

Bake at 350, bottom rack 10 minutes, middle rack 4 to 6 minutes
- 1 1/2 cup sugar [mash sugar together to make sure no lumps]
- Sprinkle brown sugar to make 2 cups but do not pack
- 3 sticks Land o Lakes margarine melted
- 4 extra large eggs
- Mix eggs and sugar, pour melted margarine in mix.
- Add 2 caps vanilla stir mix then add 12 ounces of chips
- 2 tsp soda
- 1 tsp salt
- Dome flour in four cups to make about 4 1/2 to 4 3/4 cup mix.
Cream Cheese Pound Cake
