Fried Okra Recipe

Heat the oil to 360 degrees F
- For the Eggwash:
- 1 lb Fresh Okra, both ends trimmed and cut into 1/2 inch pieces
- 3 Egg Yolks
- 3/4 Cup Buttermilk or whole milk
- 2 Tbsp Hot sauce
- 2 Tbsp Kosher salt
- 1 tsp Cayenne
- For the breading:
- 1/2 Cup White Corn Meal
- 1/2 Cup Corn Flour
- 2 Tbsp Kosher salt 1 tsp Cayenne
- 1 Tbsp Garlic Powder
- Oil for frying
Guiltless Guacamole

In a food processor with a knife blade attached, puree the beans and lime juice until smooth
- One 15 to 19-ounce can white kidney beans (cannellini), drained and rinsed
- 1 tablespoon lime juice, or more to taste
- 1/2 cup loosely packed fresh cilantro leaves
- 1/4 cup coarsely chopped sweet onion, such as Vidalia or Maui
- 1/2 teaspoon salt
- 1 jalapeno chile, seeded
- 1 ripe avocado, halved and pitted
- 2 plum tomatoes
- Sliced fresh basil leaves, for garnish, optional
- Baked tortilla chips or fresh-cut vegetables, for serving

- 3 tablespoons unsalted butter, divided
- 1 pound red cabbage, cored and thinly sliced
- 2 Turkish bay leaves or 1 California
- 3/4 cup water, divided
- 3 tablespoons balsamic vinegar, divided

Christmas Brunch Casserole

Place bacon in a large skillet
- 1 pound bacon
- 2 onions, chopped
- 2 cups fresh sliced mushrooms
- 1 tablespoon butter
- 4 cups frozen hash brown potatoes, thawed
- 1 teaspoon salt
- 1/4 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 4 eggs
- 1 1/2 cups milk

Super Simple Shrimp Tacos | Clean & Delicious with Dani Spies

Heat tortillas over medium heat in a dry skillet until warm and starting to form small brown spots
- 1 lb of frozen shrimp, defrosted, peeled, & deveined
- 6 oz fat free Greek yogurt
- 1/4 cup chopped cilantro
- 2 tbsp fresh lime juice
- 1/2 tsp cayenne pepper
- 1/2 a head of cabbage, thinly sliced (about 5 cups)
- 8 corn tortillas
- 4 tsp extra virgin olive oil
- Salt and pepper to taste
Sweet and Easy Pineapple Empanadas

Preheat the oven to 350 degrees F
- Non-stick cooking spray
- 1 (1-pound) package frozen puff pastry, thawed
- 1/3 cup cajeta or thick caramel sauce
- 1/2 cup finely grated Monterrey jack cheese
- 1/4 cup pineapple, peeled and diced into 1/2-inch cubes (about 1 cup)
- 2 eggs, beaten and blended with 1 tablespoon water
- All-purpose flour, for dusting
- 2 tablespoons demarara or light brown sugar
- Special equipment: a 3-inch round cookie cutter or a clean 3-inch diameter can with the top removed
Deep-Fried Bocconcini with Spicy Tomato and Garlic Chutney

For the bocconcini: Drain the bocconcini and pat dry with paper towels
- 16 (1-inch diameter) balls bocconcini mozzarella cheese
- 2 cups all-purpose flour
- Kosher salt and freshly ground black pepper
- 4 eggs, beaten
- 3 cups seasoned Italian-style bread crumbs
- Vegetable oil, for frying
- Chutney
- 8 cloves garlic
- 1 (1-inch) piece fresh ginger, peeled and coarsely chopped
- 1/4 teaspoon kosher salt, plus more for seasoning
- 1/2 cup red wine vinegar
- 1/4 cup sugar
- 2 tablespoon extra-virgin olive oil
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1 (15-ounce) can diced tomatoes
Baked Italian Chicken Wings

Bake 400
- In a large bowl add:
- 2 1/2 pounds chicken wings (if using frozen thaw ice remove and dry off with paper towels)
- 3 teaspoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 2 cloves of minced garlic
- pinch of black pepper and cayenne pepper
- Toss wings to coat, cover with plastic wrap for at least three hours or overnight.
- Place in a 400 degree hot oven on a cookie sheet lined with parchment paper bake turning often till crispy.
- After wings are completely cooked and crispy looking, immediately brush with sauce below:
- 2 tablespoon melted butter
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chopped parsley
- 1 tablespoon parmesan cheese
- 1/2 teaspoon garlic powder
- Drizzle or brush sauce over hot crispy wings and serve
Oyster Dressing

Melt margarine in a 10-inch skillet
- 1/2 cup margarine
- 2 large onions, chopped
- 1/3 cup chopped celery
- 4 slices bread
- Water
- 1 egg, beaten
- 2 t chopped parsley
- 1 pint oysters, drained
- Salt
- Pepper
- Pinch Basil
- Pinch sage
- Pinch thyme
- Pinch marjoram
- Bread crumbs (optional)
- Dots of Margarine
