Avocado Fritters – Four Ways

On a recent trip to the Mayan Riviera I had a fried avocado salad at one of the large hotels on the beach
- 1-2 avocados
- 1 cup flour
- 1 egg, whisked
- 2 cups bread crumbs (Panko or regular bread crumbs)
- Salt and pepper
- 2 cups canola oil
Buffalo Chicken Skewers

In a large bowl, combine the chicken and buffalo wing sauce
- 1 pound chicken tenders, cut into 1-inch strips
- 1/3 cup buffalo wing sauce
- 30 bite-sized pieces celery (about 5 stalks)
- 30 grape tomatoes
- Blue cheese dressing, for serving
- Special Equipment: 30 (4-inch) wooden skewers, soaked in water for 30 minutes
Spaghetti Supersized with Spaghetti Squash

- 1 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon dry yeast
- 1 teaspoon salt
- 3 tablespoons sugar
- 1 1/2 cups warm water
- 4 cups all-purpose flour

- 1 whole Small/medium Sweet Potato
- 1 Tablespoon Canola Oil

- 1 pound ground lamb
- 1/4 cup finely chopped fresh mint
- 1 tablespoon kosher salt, plus more for seasoning
- 1 teaspoon freshly ground black pepper, plus more for seasoning
- 1 egg
- 1 tablespoon vegetable oil
- 1/3 cup finely chopped white onion
- 2 tablespoons tomato paste
- 2 stalks celery, finely chopped
- 1 ear of corn, kernels cut off the cob
- 1 carrot, peeled and finely chopped
- 6 cups low-sodium chicken broth
- 1 bay leaf
- 1 whole serrano chile
Cream Cheese Pound Cake with Grilled Plums

For the cake: Preheat the oven to 325 degrees F
- Grilled Plums:
- Nonstick baking spray with flour
- 1 1/2 cups (3 sticks) butter, softened
- 1 (8-ounce) package cream cheese, softened
- 3 cups sugar
- 1/2 teaspoon almond extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 6 large eggs
- Nonstick, nonflammable cooking spray
- 12 ripe plums, pitted and thickly sliced
- 1/2 cup (1 stick) butter, melted

Fried Fish Bites with Sweet Potato Fries and Spicy Mayo

Directions Directions For the mayonnaise: In a blender, combine all ingredients and process until smooth
- For the mayonnaise:
- 1 1/4 cups mayonnaise
- 2 tablespoons freshly squeezed lime juice (from 1 medium lime)
- 8 cilantro sprigs, stems trimmed
- 2 medium garlic cloves
- 1 teaspoon dry mustard powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- For the fries:
- 4 cups vegetable oil
- 2 large sweet potatoes (about 2 pounds)
- 2 teaspoons white wine vinegar
- For the fish:
- 1 pound sole or haddock fillets
- 1/2 cup all-purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon freshly ground black pepper
- 1 cup chilled club soda
Beef Empanadas-

- 1-14oz pkg of empanada shells
- 1 - 8 oz pkg of shredded cheddar and Monterey jack cheese
- 1-12 oz jar of sofrito sauce
- 1 pound of ground beef
- 1 tsp of garlic powder or to taste
- 1 bottle of vegetable oil
Artichoke Rye Toasts Recipe

- 24 slices snack rye bread
- Refrigerated butter-flavored spray
- 1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
- 1/8 teaspoon cayenne pepper
- 4 egg whites
