- 1 can Rotel Diced Green Chilies And Tomatoes (10 Ounce Can)
- 1 can Whole Tomatoes (14.5 Ounce Can)
- 2 cups Low Sodium Chicken Broth (more If Needed)
- 1 teaspoon Cumin (more To Taste)
- 1 teaspoon Kosher Salt
- Fresh Cilantro, Chopped
Chicken and Noodles

Start by putting the chicken in a pot and covering it with water
- One 2- to 3-pound chicken fryer, cut up
- 2 carrots, diced
- 2 celery stalks, diced
- 1/2 medium onion, diced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground thyme
- 1/4 teaspoon turmeric
- 16 ounces frozen home-style egg noodles(such as Reame(TM)s)
- 3 tablespoons all-purpose flour
- Splash of half-and-half, optional
- 2 teaspoons finely minced fresh parsley
Baked Costa Rican-Style Tilapia with Pineapples, Black Beans and Rice

- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1/4 cup freshly squeezed orange juice
- 1 lime, juiced
- 2 tablespoons olive oil

- 2 garlic cloves, minced
- 1 teaspoon sugar
- Kosher salt and freshly ground black pepper
- 4 (5 to 7-ounce) tilapia fillets, rinsed and patted dry

Broccoli Salad

Ham Pasta Salad

- DRESSING:
- 1 package (7 ounces) shell macaroni, cooked and drained
- 2 cups cubed fully cooked ham
- 1 cup chopped cucumber
- 1 cup peas (Frozen peas are best)
- 1 cup cherry tomotoes (slice in half)
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/2 cup Miracle Whip
- 1/2 tablespoons milk
- 1/4 teaspoon salt
Baked Zucchini

- 1 teaspoon olive oil
- 1 pound zucchini, sliced 1/4-inch thick, at an angle
- Kosher salt and freshly ground black pepper
- Pinch of Hungarian paprika
- 1/2 cup panko breadcrumbs (Japanese)

- 1 avocado, sliced
- 1 cucumber, seeded and sliced

- 1/4 of a fresh jalapeno, sliced
- 6 sprigs fresh cilantro, plus more for garnish
- 3 green onions, chopped, plus more for garnish
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon rice wine vinegar
- 1 teaspoon chili paste
- Pinch black pepper
- 8 large shrimp or tiger prawns
- 1 1/2 cups rice flour
- 1 1/2 to 2 cups carbonated water
- Canola oil, for frying
