The best molasses cookies! The molasses flavor comes from the "piloncillo"
- 1 3/4 cups firmly packed, chopped or grated piloncillo, or dark brown sugar
- 3/4 cup water
- 1 Ceylon or true cinnamon stick
- 1 cup unsalted butter, at room temperature, thickly sliced, plus more to grease the baking sheets
- 2 tablespoons honey
- 4 1/4 cups all-purpose flour, plus more for dusting to roll the dough
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon kosher or coarse sea salt
- 2 eggs, at room temperature and lightly beaten
- 1 egg, lightly beaten, for glaze
- Confectioners’ sugar for sprinkling on top, optional
- Ground cinnamon for sprinkling on top, optional

TOPREPARE Place the rice in a bowl and cover with hot water

Haven't tried this yet, and although the directions seem endless - doesn't sound that complicated
- 1 1/2 cups whole milk, heated to warm (105°F–110°F)
- 1/4 cup packed light brown sugar
- 1 tablespoon plus 1/4 teaspoon active dry yeast (from two 1/4-oz packages)
- 3 3/4 to 4 1/2 cups unbleached all-purpose flour
- 1 tablespoon kosher salt
- 3 sticks (1 1/2 cups) cold unsalted butter
- Special equipment: a standing electric mixer with dough hook, 2 kitchen towels (not terry cloth), a ruler, a pastry brush

- 1 teaspoon (6 grams) baking soda
- 3/4 teaspoon kosher or coarse sea salt (4 grams)
- 7 tablespoons (3 1/2 ounces or 100 grams) unsalted butter, cut into 1-inch cubes and frozen
- 1/3 cup (114 grams) mild-flavored honey, such as clover
- 5 tablespoons (77 grams) milk, full-fat is best
- 2 tablespoons (27 grams) pure vanilla extract
