Blue Cheese Beef Tenderloin

1. Place beef in a shallow dish
- 1 (3 pound) whole beef tenderloin
- 1/2 cup teriyaki sauce
- 1/2 cup red wine
- 2 cloves garlic, chopped
- 4 ounces blue cheese, crumbled
- 1/3 cup mayonnaise
- 2/3 cup sour cream
- 1 1/2 teaspoons Worcestershire sauce
Chocolate Silk Pie

1. In a small saucepan, combine half the cream, the chocolate, and 3 tablespoons of the sugar
- Shortbread-Pecan Crust
- 2 pints heavy cream
- 6 ounces semisweet chocolate, roughly chopped
- 6 tablespoons sugar
- 1 1/2 tablespoons cornstarch
- 6 large egg yolks
- 1/2 teaspoon vanilla extract
- 2 tablespoons unsalted butter, at room temperature
- 1 tablespoon cocoa
- Shortbread-Pecan Crust
- 1 cup (4 ounces) pecans
- 1/2 10-ounce box shortbread cookies (such as Lorna Doone)
- 6 tablespoons unsalted butter, cold, cut into pieces
- Directions
- Heat oven to 350° F. In a food processor, pulse the pecans and cookies until crumbs form. Add the butter and pulse just until combined.
- Transfer the mixture to an 8- or 9-inch pie plate, pressing it evenly over the bottom and up the sides.
- Bake the crust until slightly darkened, 20 to 25 minutes. Transfer pie plate to a wire rack and let cool. (You can set the baked crust aside at room temperature for up 24 hours.)
Fondant

1. Sprinkle the gelatin over cold water in a small bowl and let it rest for 2 minutes to soften 2
- 1 Tbsp of unflavored gelatin
- 1/4 cup of cold water
- 1 tsp of almond extract
- 1/2 cup of light corn syrup (If a corn syrup is not available, you can substitute it with a sugar syrup made with 1-1/4 cups sugar and 1/3 cup water, boiled together until syrupy)
- 1 Tbsp of glycerin (some recipes say it’s optional, believe me, it’s a must)
- 2 lbs 10X confectioners’ sugar
- 1/2 tsp of white vegetable shortening
Downeast Maine Pumpkin Bread

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
Water Chestnut and Bacon Salad

Spread the mayo over the top layer of lettuce being sure to seal the edges Cover and serve the next day
- Layer lettuce on the bottom of a pretty bowl
- 1 pound of frozen peas
- 1 can of water chestnuts
- 1 cup of shredded cheese
- 1 pound of bacon (fried and crumbled)
- Another layer of lettuce covering those items
- Top with about 1-1 1/4 cup of mayonaise with a little sugar sprinkled in it
Aussie Chicken

1. Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 minutes
- 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
- 2 teaspoons seasoning salt
- 6 slices bacon, cut in half
- 1/2 cup prepared yellow mustard
- 1/2 cup honey
- 1/4 cup light corn syrup
- 1/4 cup mayonnaise
- 1 tablespoon dried onion flakes
- 1 tablespoon vegetable oil
- 1 cup sliced fresh mushrooms
- 2 cups shredded Colby-Monterey Jack cheese
- 2 tablespoons chopped fresh parsley

- 1/3 cup brown sugar
- 1/4 cup lemon juice, divided
- 1 teaspoon mustard powder
- 2 pounds ground beef
- 3 slices bread, broken up into small pieces
- 1/4 cup chopped onion
- 1 egg, beaten
- 1 teaspoon beef bouillon granules
