Bubba's Jambalaya

Directions Heat a large pot over medium-high heat
- 6 slices bacon, cut into 1 inch pieces
- 1 cup chopped celery
- 1 green bell pepper, seeded and chopped
- 1 onion, chopped
- 1/2 pound cubed cooked ham
- 1/2 pound cubed cooked chicken
- 1/2 pound cubed smoked sausage
- 2 (14.5 ounce) cans crushed tomatoes, with liquid
- 2 cups beef broth
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 2 teaspoons Cajun seasoning
- 2 cups uncooked white rice
- 1/2 pound salad shrimp

Zucchini Rice Casserole

- 1 1/2 cups long-grain brown rice
- 3 cups reduced-sodium chicken broth
- 4 cups diced zucchini , and/or summer squash (about 1 pound)
- 2 red or green bell peppers, chopped
- 1 large onion, diced
- 3/4 teaspoon salt
- 1 1/2 cups low-fat milk
- 3 tablespoons all-purpose flour
- 2 cups shredded pepper Jack cheese, divided
- 1 cup fresh or frozen (thawed) corn kernels
- 2 teaspoons extra-virgin olive oil
- 8 ounces turkey sausage, casings removed
- 4 ounces reduced-fat cream cheese , (Neufchâtel)
- 1/4 cup chopped pickled jalapeños
Paleo Dairy Free Black Bottom Banana Cream Pie

Bake the pie crust for 7 minutes for a tart pan or 12-15 for a pie plate
- 1 recipe for Honey Graham Cracker Pie Crust
- 1 cup Coconut Whipped Cream (for the topping)

- 2 teaspoons vanilla extract
- 1 teaspoon unflavored gelatin (*note I increased the gelatin from 1/2 teaspoon in the original recipe)

- 1 1/2 pounds coarsely chopped cored tomatoes

- 3 cups large-dice crustless day-old country bread, such as pain au levain
- 2 medium Kirby cucumbers, peeled and coarsely chopped
- 1/2 cup water
