"I Can't Believe You Made That" Cake

Directions Preheat the oven to 350 degrees F (180 degrees C)
- Buttercream:
- Vegetable oil or oil spray
- 1 3/4 sticks/7oz/200g butter, softened
- 1 cup/7oz/200g superfine sugar
- 4 eggs
- 1/2 cup/2 1/2oz/60g all-purpose flour
- 2/3 cup/4 1/2oz/120g cake flour
- 2/3 cup/75g/3oz unsweetened cocoa
- Pinch of salt
- 2 tsp baking powder
- 14oz/400g dark, milk, or white chocolate cigarillos (75 to 80 in total) or chocolate rolled wafers
- 2 1/4 sticks/9oz/250g butter, softened
- 4 1/2 cups/1lb 2oz/500g confectioners' sugar
- 3 1/2 oz/100g good dark chocolate (at least 70-percent cocoa solids), melted and slightly cooled
- Decoration (optional):
- Fresh flowers, for a Christening cake
- Strawberries or raspberries, for the girls
- Figs, quartered, for the boys
- Special equipment: 8in (20cm) round deep cake pan

- 1 tablespoon olive oil
- 1 tablespoon garlic, fresh or jarred
- 1 pinch crushed red pepper flakes
- 1/4-1/3 cup bottled low-sodium teriyaki sauce
- 4-5 good shakes low-sodium soy sauce
- 2-3 tablespoons corn starch
- Hot cooked brown rice
- 1/2 cup cold water
Steamed Chocolate Pudding Cakelets

Place a rack in the center of the oven and preheat the oven to 350° F
- 1/3 cup unbleached all-purpose flour
- 1/4 cup sugar
- 2 tablespoons unsalted butter
- 4 ounces bittersweet chocolate, roughly chopped
- 3 tablespoons dutch process cocoa
- 3 large eggs, separated
- 1 cup whole milk
- 1/4 teaspoon salt
Cheese Fries

I came up with this recipe after my daughter had cheese fries at a restaurant and couldn't stop talking about them
- 1 package (28 ounces) frozen steak fries
- 1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
- 1/4 cup 2% milk
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Paprika
Candy Bar Pie

Our Candy Bar Pie is luscious tasting and easy as can be to prepare
- 1 unbaked 9-inch pie crust
- 5 (2.07 ounces each) candy bars, such as Snickers
- 1/2 cup sugar
- 4 (3-ounce) packages cream cheese, softened
- 2 eggs
- 1/3 cup sour cream
- 1/3 cup creamy peanut butter
- 3 tablespoons heavy cream
- 2/3 cup semisweet chocolate chips
No-Egg "Eggnog"

In a punch bowl, combine the milk & pudding mix; mix well
- 5 1/2 c milk
- 1 pkg (4 oz) instant vanilla pudding & pie filling
- 4 t rum extract
- 3/4 t ground nutmeg, divided
- 2 c (1 pint) heavy cream
- 2 T confectioners' sugar
Chocolate Pretzel Yummies

In a food processor, combine walnuts, peanut butter pieces, and milk chocolate pieces
- 2 cups walnuts (8 oz.)
- 1 cup peanut butter flavored chips
- 1 cup milk chocolate chips
- 1/2 cup light colored corn syrup
- 1/2 cup butter
- 2/3 cup sweetened condensed milk
- 1 cup brown sugar, packed
- 1/2 teaspoon vanilla
- 25 pretzel rods
Cowboy Caviar

Combine everything but dressing; let sit in fridge overnight
- 1 can of black beans, drained
- 1 can of purple-hull peas, drained
- 1 can of corn, drained
- 1/2 c salsa (optional)
- 2 cans Rotel tomatoes, drained
- 1 red onion, chopped fine
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 orange pepper, chopped
- 1/2 c cilantro, chopped
- 1 T sugar
- 1 tsp black pepper
- 1 tsp salt
- 1 chopped avacado
- OPTIONAL Dressing: (or use Italian Dressing)
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1/2 lime, juiced
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Roasted Garlic

By roasting garlic, it becomes much more mild and therefore can be used straight from the clove
