Dahi Toast

For Dahi Toast: In a butter warmer or a small pan over low heat, warm the oil
- For Dahi Toast:
- ¼ cup olive oil, plus more
- for cooking the toast
- 1½ tsp black mustard seeds
- 3 sprigs fresh curry leaves,
- stripped (24 to 30 leaves)
- 1 cup low-fat plain Greek
- yogurt
- 1 medium red onion, finely
- diced
- ½ cup finely chopped fresh
- cilantro (stems and leaves)
- 2 small Indian green chiles
- or serrano chiles, finely
- chopped
- 1 tsp kosher salt
- ½ tsp freshly ground black
- pepper
- Pinch of red chile powder
- 12 large slices of white
- sourdough bread
- Ketchup, for serving
- For Cilantro Chutney:
- 1 bunch fresh cilantro,
- preferably organic,
- stems and leaves roughly
- chopped (about 4 cups)
- 1 small Indian green chile
- or serrano chile, roughly
- chopped
- 2 tbsp fresh lime juice,
- from about 1 lime, plus
- more if needed
- ¼ tsp granulated sugar
- ¾ tsp kosher salt, plus
- more if needed

- strip steak, tempered
- 3 tbsp grapeseed oil
- 4 garlic cloves, smashed
- ½ bunch thyme sprigs
- 4 rosemary sprigs
- 4 tbsp unsalted butter,
- cubed and chilled
- Kosher salt to taste
- Fresh cracked pepper to
- taste
- For Chimichurri:
- 2 cup blended oil
- ½ cup red wine vinegar
- 8 garlic cloves, minced
- 2 bunches parsley, picked
- and chopped
- 3 tbsp shallots, minced
- 1 bunch cilantro, picked
- and chopped
- 2 tsp oregano, dried
- 1 tsp red chili flakes
- Kosher salt to taste
- Black pepper, fresh ground

Red Stew Chicken

- 2 tbsp canola oil

- 2 large red bell peppers (stemmed, seeded and roughly chopped)
- 6 roma tomatoes, roughly chopped
- 1 cup tomato paste
- 2 medium red onions, peeled and roughly chopped
- 14 cloves garlic, crushed
- one 2-inch chunk of ginger, peeled and roughly chopped
- 8 maggi cubes
- 2 tsp. Peppa Sauce
- 2 tsp. Jamaican curry powder
- 1/2 cup canola oil
- 4 tsp. kosher salt

- 12 scotch bonnet chilis, stemmed and roughly chopped
