Chicken Fried Chicken

1. Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs
- 30 saltine crackers
- 2 tablespoons all-purpose flour
- 2 tablespoons dry potato flakes
- 1 teaspoon seasoned salt
- 1/2 teaspoon ground black pepper
- 1 egg
- 1/4 cup vegetable oil
- 6 skinless, boneless chicken breast halves
Sausage Gravy (for Biscuits)

For a hearty breakfast on a crisp morning, it's hard to beat a good sausage gravy
- 1 lb. pork sausage
- 4 T flour
- 1/4 tsp. white pepper
- 1/4 tsp. salt
- 1/4 tsp. tarragon
- 2 cups milk
- Salt to taste
Chicken Roll-Ups for 2

Cut each cheese slice in half and place 1 on top of each piece of chicken
- 2 slices Swiss cheese
- 2 chicken breasts, pounded to 1/4 inch thick
- 1 Tbsp flour
- 1/4 tsp pepper
- 1/2 cup chicken broth
- 1/4 cup white wine or chicken broth
- 1/4 tsp dried oregano
Green Rice Casserole

Combine all ingredients and pour into a 8-inch square baking dish
- 1 1/2 cups cooked rice (we use brown rice)

- 1/2 cup milk

- 1 teaspoon cinnamon, divided
- 3 large Jonathan or McIntosh apples, peeled, cored and thinly sliced

Classic Christmas Cookies

This is a very Classic Christmas cookie and many of you probably already have this recipe or a version of it
- 1/2 cup butter, softened
- 1/3 cup Crisco Butter-Flavored Shortening
- 1 cup granulated sugar
- 1/3 cup dairy sour cream
- 1 large egg
- 1 teaspoon vanilla
- 1 teaspoon lemon peel, grated finely
- 1 teaspoon lime peel, grated finely
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 2 1/2 cups all purpose flour
