Entenmann's Pound Cake

Preheat oven to 325°. Spray an 8-1/2" Pyrex loaf dish with Pam
- 1/2 pound Butter or margarine
- 2 cups Powdered sugar
- 3 large Eggs
- 1 2/3 cups Flour
- 1 tablespoon Lemon extract, or vanilla
Lemon Garlic Sirloin Tips

Bring meat to room temperature and pat dry
- 2 pounds sirloin tips, trimmed and cubed into bite-sized pieces
- 3 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper
- 4 large cloves garlic, finely chopped
- 1/2 cup finely chopped flat-leaf parsley, a couple of handfuls
- 1 lemon, zested and juiced
- 1/2 cup white vermouth or dry white wine

- 1 2-lb butternut squash, halved lengthwise and seeded
- 2 cups homemade chicken stock or canned low-salt chicken broth
- 1/2 tsp cinnamon
- 1/2 tsp dried marjoram
- 1/2 tsp dried thyme
- Pinch of grated nutmeg
- 1 cup milk or half-and-half
- Salt and pepper, to taste
- 1 (10-oz) jar pumpkin butter (optional garnish)
- Chopped pistachio nuts (optional garnish)
Mascarpone and Lemon Gnocchi

For the gnocchi: In a large bowl, combine the mascarpone, egg, egg yolk, nutmeg, lemon zest, Parmesan, and salt
- Gnocchi:
- 1 cup mascarpone, at room temperature (8 ounces)
- 1 large egg, at room temperature
- 1 large egg yolk, at room temperature
- 1/4 teaspoon ground nutmeg
- 2 large lemons, zested
- 1 cup grated Parmesan (4 ounces)
- 1 teaspoon kosher salt
- 3/4 cup all-purpose flour, plus extra for forming the gnocchi
- Sauce:
- 1/2 cup extra-virgin olive oil
- 1/4 teaspoon kosher salt
- 1/2 cup chopped fresh basil
- 1/2 cup grated Parmesan, for serving
Sweet Potato Soup

First, heat olive oil in a sauté pan and add the coriander, cinnamon, onion, carrot, and garlic
- Optional:
- 1 Tbsp olive oil
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 small onion, peeled & separated
- 1 carrot, halved
- 1 garlic clove
- 1 medium sweet potato or yam, baked & quartered
- 1/2 green apple, seeded
- 2 cups chicken stock
- Salt & pepper to taste
- 2 3–4'' pieces of cooked ham, warmed
- 1/4 cup warm/hot cream
- 2 Tbsp maple syrup
- Minced chives, for garnish
