Strawberries and Cream French Macaroons

- Macarons:
- 3 large egg whites
- 1 cup toasted slivered almonds
- 2 cups confectioners' sugar
- 2 Tbsp sugar
- 2 tsp. strawberry extract
- Red food coloring
- 1 recipe Vanilla Bean-Cream Cheese Filling (recipe below)
- Vanilla Bean-Cream Cheese Filling:
- 1 (8 oz) package cream cheese, softened
- 1/2 cup confectioners' sugar
- 2 Tbsp heavy whipping cream
- 1 vanilla bean, split in half lengthwise, scraped and reserved
Maple-Garlic Marinated Pork Tenderloin

1.Combine mustard, sesame oil, garlic, pepper, and maple syrup
- 1 1/2 pounds pork tenderloin
- 2 tablespoons Dijon mustard
- 1 teaspoon sesame oil
- 3 cloves garlic, minced
- fresh ground black pepper to taste
- 1 cup maple syrup
Gnocchi Chicken Minestrone

Sprinkle chicken with oregano, salt and pepper
- 1-1/4 pounds chicken tenderloins, cut into 1/2-inch pieces
- 3/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil, divided
- 1 each small green, sweet red and yellow peppers, finely chopped
- 1 medium zucchini, finely chopped
- 1 cup chopped fresh baby portobello mushrooms
- 1/3 cup chopped red onion
- 1/3 cup chopped prosciutto or deli ham
- 4 garlic cloves, minced
- 2 cans (14-1/2 ounces each) chicken broth
- 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
- 3/4 cup canned white kidney or cannellini beans, rinsed and drained
- 1/2 cup frozen peas
- 3 tablespoons tomato paste
- 1 package (16 ounces) potato gnocchi
- 1/2 cup shredded Asiago cheese
- 8 fresh basil leaves, thinly sliced
Ricotta, Garlic and Honey Bruschetta

Preheat oven to 450°F. Cut the top of the garlic bulb to expose the cloves
- 1 bulb garlic
- EVOO – Extra Virgin Olive Oil, for drizzling
- Salt and pepper
- 8 ounces fresh ricotta
- 1 tablespoon fresh thyme, chopped
- Splash of milk
- 2 baguettes, batards or other 2- to 3-inch wide crusty long loaves, cut into slices and toasted
- Truffle honey for garnish (optional)

- 2 Tbsp lemon juice, fresh

Uptown Burgers and Tots

- For the Tots:
- 6 medium starchy potatoes, peeled and cubed
- Salt
- 3 tablespoons finely grated onion
- 4 tablespoons flour
- 1 egg
- 1 tablespoon minced fresh rosemary
- Finely ground black pepper
- Oil for frying
- For the Burgers:
- 1 1/2 pounds beef tenderloin, cut into cubes or ask your butcher to coarse-grind the tenderloin for you

Green Bean Fries with Buttermilk Dipping Sauce
