Individual Chocolate Lava Cakes

To make centers, melt 2 ounces of chocolate (1/2 a baking bar) and cream in double boiler
- 1 1/2 Ghirardelli 60% Cacao Bittersweet Chocolate Baking Bar
- 2 eggs
- 1/4 cup(s) heavy cream
- 8 tablespoon(s) (1 stick) unsalted butter
- 2 egg yolks
- 1/3 cup(s) sugar
- 1/2 teaspoon(s) vanilla extract
- 1/4 cup(s) cake flour
Perfect Potato Salad

Cut the potatoes in halves or thirds, then boil until fork tender
- 5 pounds russet potatoes (about 8 medium russets)
- 1 1/2 cups real mayonnaise, plus more if needed
- 4 tablespoons yellow mustard, plus more if needed
- 5 whole green onions, sliced up to the darkest green part
- 2 tablespoons fresh dill, chopped
- 1 teaspoon kosher salt, plus more if needed
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon paprika
- 10 whole small sweet pickles, sliced
- 2 tablespoons pickle juice
- 6 whole hard boiled eggs, peeled and sliced
Sweet Apple Iced Tea

In a medium saucepan, bring the water to a boil over high heat
- 6 cups water
- 6 sweet apple tea bags (recommended: Celestial Seasonings Sweet Apple Chamomile)
- 1 1/3 cups Vanilla Simple Syrup, recipe follows
- 1 small apple, thinly sliced
- 1/2 lemon, thinly sliced

Onion Rings

1. Position racks in upper and lower thirds of oven; preheat to 450°F
- 2 medium yellow onions
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 3 large eggs
- 1 1/2 cups fine dry breadcrumbs, preferably whole-wheat (see Note)
- 1 tablespoon seasoning blend, such as Cajun, jerk or Old Bay
- Olive oil or canola oil cooking spray
- Try any seasoning blend that you have on hand to add flavor to the breading or substitute 1 teaspoon salt instead.
Apple Cake

Cream butter and sugar together and beat until smooth
- Topping:
- 1/2 cup (125 ml) butter
- 1 cup (250 ml) firmly packed brown sugar
- 1 egg
- 1 1/2 cups (375 ml) all-purpose flour
- 1/2 tsp (2 ml) baking powder
- 1/2 tsp (2 ml) baking soda
- 1/2 tsp (2 ml) salt
- 1/2 tsp (2 ml) cinnamon
- 1/4 tsp (1 ml) freshly grated nutmeg
- Pinch cloves
- 1/2 cup (125 ml) buttermilk
- 1 1/2 cups (375 ml) finely diced, peeled and
- cored apples
- 1/2 cup (125 ml) firmly packed brown sugar
- 1/2 cup (125 ml) chopped walnuts
- 1 tsp (5 ml) cinnamon
POTATO CAKES

1. sautee onions and garlic in 1 T of butter, set aside 2
- 1/4 c finely chopped onion
- 1/2 tsp minced garlic
- 6 c cold mashed potatoes
- 2 egg yolks
- 1/4 stk melted butter
- 1/4 c flour
- 1/2 c frozen spinach, drained and chopped
- 6 slc american cheese, broken up in little pieces
- 3/4 c shredded cheddar
- 1/4 c shredded mozzerella
- 2 to 3 Tbsp parmesan cheese
- 1 Tbsp italian parsley
- 1/2 tsp salt
- 1/4 tsp pepper

Orzo with Sausage, Peppers and Tomatoes

Using tongs, place the bell peppers over a gas flame
- 1 red bell pepper
- 1 orange bell pepper
- 1 pound orzo pasta
- 3 cups chicken stock
- 3 cups water
- 1 tablespoon kosher salt
- 2 tablespoons olive oil
- 7 ounces (2 links) mild Italian turkey sausage, casings removed
- 1 clove garlic, minced
- 2 plum tomatoes, chopped
- 1/4 teaspoon red pepper flakes, optional
- 2 tablespoons chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper
- 1/2 cup ricotta salata cheese, crumbled
Caponata Panini

Using a grapefruit spoon or fingers, scoop out a 1-inch wide trough along the cut sides of the baguettes
- 4 sourdough demi-baguettes or rolls, halved lengthwise
- 4 slices provolone cheese, halved
- 1 1/3 cups caponata, recipe follows
- Special Equipment: a panini grill
- Preheat a panini grill.
Picnic Deviled Eggs

Halve the eggs lengthwise and pop the yolks from the whites
- 6 hard-cooked large eggs, peeled
- 3 tablespoons mayonnaise
- 1/8 teaspoon Worcestershire sauce
- 2 tablespoons minced celery
- 1 tablespoon minced dill pickle
- 2 teaspoons chopped fresh flat-leaf parsley
- 1/8 teaspoon kosher salt
- Dash of hot sauce
- Paprika
