  • 1 chicken cut into serving sized pieces
  • 1 lemon
  • 1/2 cup extra virgin olive oil
  • 12 garlic cloves, unpeeled and lightly crushed
  • 1/4 c. dried wild oregano, crushed
  • Salt
  • Freshly ground black pepper
  • 2 lbs. baking potatoes, cut lengthwise into quarters
  • 6 bay leaves
  • 1 can chicken broth (or 1 3/4 cup homemade stock)

1 Put avocado pieces and lime juice into a food processor or blender and pulse until blended

  • 2 large avocados, cut and peeled
  • 3 Tbsp freshly squeezed lime juice (can substitute lemon)

  • 1 Tbsp minced parsley
  • 1 teaspoon Dijon mustard or to taste

  • 1/4 cup green peppercorns, in brine, rinsed and drained (can be found in supermarkets next to the capers)
