Oregano Chicken (Kotopoulo Riganato)

Moist chicken with a hint of lemon and lots of oregano
- 1 chicken cut into serving sized pieces
- 1 lemon
- 1/2 cup extra virgin olive oil
- 12 garlic cloves, unpeeled and lightly crushed
- 1/4 c. dried wild oregano, crushed
- Salt
- Freshly ground black pepper
- 2 lbs. baking potatoes, cut lengthwise into quarters
- 6 bay leaves
- 1 can chicken broth (or 1 3/4 cup homemade stock)
Salmon and Avocado

1 Put avocado pieces and lime juice into a food processor or blender and pulse until blended
- 2 large avocados, cut and peeled
- 3 Tbsp freshly squeezed lime juice (can substitute lemon)
- 3-4 Tbsp olive oil
- 1 Tbsp minced shallots or green onion
- 1 Tbsp minced parsley
- 1 teaspoon Dijon mustard or to taste
- Salt and pepper to taste
- 1 to 1 1/2 pounds of salmon fillets
- Canola oil
Loin of Pork with Green Peppercorns

Serves 8 Delicious and tender with a hint of spice from the peppercorns
- 1 pork loin, tied, no bones (about 3 pounds) or with bones, Frenched and tied (5 pounds/10 bones)
- 2 Tbsp good olive oil
- 4 tsp Dijon mustard, divided
- 4 tsp whole-grain mustard, divided
- 1 tsp ground fennel seed
- Kosher Salt
- Freshly ground black pepper
- 3 Tbsp all-purpose flour
- 1 cup good white wine
- 3 cups apple cider vinegar, or Chicken Stock
- 1/4 cup green peppercorns, in brine, rinsed and drained (can be found in supermarkets next to the capers)
Individual New England Fish Pies

Great for kids who think they don't like fish
- 2 lbs. potatoes, peeled and chopped
- 8 oz hadock, cod, scrod, or whitefish fillets, skinned and cut into chunks
- 2 1/4 cups milk
- 6 peppercorns
- 1 bay leaf
- 1 parsley sprig
- 7 Tbsp buttr
- 6 oz scallops
- 6 oz shrimp
- 1 medium onion, finely chopped
- 3 Tbsp flour
- 1/2 cup grated Cheddar cheese
- Salt and freshly ground white pepper
- 1/2 cup frozen peas
- 1 egg, lightly beaten
Golden Door cinnamon Cranberry Granola

Delicious with cottage cheese and fresh fruit
- 2 cups old-fashioned rolled oats
- 1/3 cup raw sunflower seeds
- 1/3 cup sliced almonds
- 1/3 cup honey
- 1/3 cup dried cranberries, chopped dates, or dried currants
- 1 tsp ground cinnamon
Cinnamon Palmiers

- 1 1/4 cups all purpose flour
- 1 tsp salt
- 1 1/2 sticks unsalted butter, frozen
- 5 to 6 Tbsp ice water
- 1 cup sugar
- 1 tsp cinnamon
Gluten-Free Chocolate Bourbon Pie

GF PIE CRUST 2 Preparing to make the dough
- GF 2 PIE CRUST
- 125 g sorghum flour
- 125 g brown rice flour, make sure it is finely milled
- 100 g tapioca starch, or cornstarch
- 2 sticks of butter, frozen in one inch cubes
- pinch of kosher salt
- 1/2 cup ice water
- PIE FILLING
- 1/2 of GF 2 pie crust recipe
- 3 eggs, beaten
- 3/4 cup sugar
- 2 Tbsp. molasses
- 2 Tbsp. maple syrup
- scant 2/3 cup light corn syrup or rice syrup
- 1 Tbsp. vanilla extract
- 2 Tbsp. melted butter
- 2 Tbsp. bourbon
- 1 2/3 cups chopped pecans, lightly toasted
- 3/4 cup good quality chocolate chips

Put garlic, vegetables, thyme and broth into a large soup pot
- 2 clove(s) (medium) garlic clove(s), minced
- 2 medium uncooked carrot(s), diced
- 2 small uncooked zucchini, diced
- 2 cup(s) (shredded) uncooked savoy cabbage, or other variety,shredded
- 2 cup(s) uncooked Swiss chard, chopped
- 2 cup(s) uncooked cauliflower, small florets
- 2 cup(s) uncooked broccoli, small florets
- 1 medium uncooked onion(s), diced
- 1 medium sweet red pepper(s), diced
- 1 rib(s) (medium) uncooked celery, diced
- 2 tsp fresh thyme, chopped
- 6 cup(s) vegetable broth

- 1 whole (2 split) chicken breast, bone in, skin on

- 2 quarts homemade Chicken Stock
- 1 cup medium-diced celery (2 stalks)
- 1 cup medium-diced carrots (3 carrots)
- 2 cups wide egg noodles
- 1/2 cup chopped fresh parsley
Herb Roasted Lamb

- 12 large unpeeled garlic cloves, divided
- 1 Tbsp chopped fresh rosemary leaves
