White Bean Huevos Rancheros

In a medium saucepan, heat 2 Tbsp of the oil
- 7 Tbsp extra-virgin olive oil
- 1 large garlic clove, finely chopped
- 1 large onion, finely chopped
- 3 large tomatoes, cored and coarsely chopped
- 1/2 canned chipotle chile in adobo, minced (about 1 tsp), pluse 1 tsp of the adobo sauce from the can
- 1 Tbsp freshly squeezed lime juice
- 2 Tbsp chopped cilantro, finely chopped
- Salt and freshly ground black pepper
- 4 oz thickly sliced ham, coarsely chopped
- Two 15-oz cans white beans, drained
- 1/2 cup water
- 12 corn tortillas, warmed
- 1 dozen large eggs
- 1/2 cup crumbled queso fresco
- Sour cream for serving
Ricotta Pancakes with Blueberries

- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1 1/2 tsp kosher salt
- 3 large eggs, separated
- 1 3/4 cups plus 2 Tbsp milk
- 6 oz ricotta cheese (1/2 cups plus 2 Tbsp)
- 1/4 cup sugar
- 1 Tbsp vanilla
- Unsalted butter for griddle
- 1 pint fresh blueberries or 2 cups frozen and thawed
