Beef Fajitas

Combine ingredients 2-8 except steak and mix well
- 2 pounds skirt or sirloin steak (I usually use sirloin)
- 1/2 cup Italian dressing
- 1/2 cup soy sauce
- 1/2 cup apple cider vinegar
- 1/3 cup Worcestershire sauce
- 1/3 cup brown sugar, packed
- 1 tsp garlic powder
- juice of 1/2 lime
- flour tortillas
- cheese
- pico de gallo
- guacamole
- sour cream
Rotel Turkey Chili

Heat oil in medium saucepan
- 1 TBSP vegetable oil
- 1 pound ground turkey
- 1 can Rotel
- 1 6-oz can tomato paste
- 1 can corn - drained
- 1 can black beans - drained and rinsed
- 1 clove garlic - minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt

- 1-1/2 pounds ground beef
- 1 can tomato soup
- 1 can Ranch Style beans
- 1 small onion - chopped
- 1 can Rotel
- Fritos
- shredded lettuce
- chopped tomatoes

Pan-Seared Tuna with Mandarin Orange Pico de Gallo

- 1/2 cup onion, chopped
- 1/2 teaspoon minced garlic
- 1 tablespoon balsamic vinegar
- 1 teaspoon brown sugar, firmly packed
- 1 11-ounce can mandarin oranges, drained
- 1/3 cup chopped avocado
- 1/3 cup chopped tomato
- 1 tablespoon lime juice
- 1/8 teaspoon crushed red pepper flakes
- 2 tuna steaks (about 1 pound total)

Chicken-Wild Rice Casserole

Place chicken in deep kettle
- 2 whole broiler-fryer chickens (3 pounds each)
- 1 cup water
- 1 cup dry sherry
- 1 1/2 tsp salt
- 1/2 tsp curry powder
- 1 medium onion, sliced
- 1/2 cup sliced celery
- 1 pound fresh mushrooms
- 1/4 cup butter
- 2 6oz packages Long Grain and Wild Rice with seasonings
- 1 cup sour cream
- 1 can cream of mushroom soup
Broccoli Salad

Wash, drain, trim stems, and section broccoli
- Salad:
- 1 bunch fresh broccoli
- 1 medium red onion - diced
- 12 slices bacon - fried and crumbled
- 1 cup yellow raisins
- 1 cup sunflower seeds
- Dressing:
- 1 cup mayonaise
- 1/2 cup sugar
- 2 TBSP vinegar
Charro/Borracho Beans (Slow Cooker)

These beans are great on their own or used in burritos, burrito bowls, or mashed and re-fried
- 2 lbs dry pinto beans
- 1 tsp salt
- 1/2 Tbsp minced garlic (about 6 cloves)
- 3 canned jalapenos, mminced(this is a medium heat, add more or less to taste)
- 1/4 cup liquid from canned jalapenos
- 2 chopotles in adobo, chopped
- 1/2 lb salt pork (found near the bacon)
- 1 medium onion, diced
- 8 cups water
- 1 14oz can crushed tomatoes
- 1 cup fresh cilantro, chopped
- For Borracho Beans
- 1 bottle dark Mexican beer or lager (like Negra Modelo or Shiner Bock)
Twice Baked Potatoes

Scrub potatoes thoroughly
- 4 medium baking potatoes
- 2 TBSP butter
- 1/2 sour cream
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup shredded cheese (cheddar or American)
- 2 TBSP thinly sliced green onion
Chicken Noodle Soup

Heat oil until shimmery. Add onion, carrots, celery, and garlic
- 1 TBSP Olive Oil
- 1 small onion, diced
- 3 medium carrots, peeled and thinly sliced
- 2 medium stalks celery, thinly sliced
- 1 clove garlic, minced
- 4 medium boneless, skinless chicken thighs, cut into bite-sized pieces
- 4 cups chicken broth
- 4 cups water
- 1 tsp Better than Bouillon Chicken Base
- 1/2 tsp dried dill weed (would use less or delete)
- 1/2 tsp dried parsley
- salt and pepper to taste
- 6 ops (half bag) wide egg noodles, cooked
Lina's Italian Tomato Sauce

Put olive oil in large heavy stew pot, heat
- For meat sauce:
- 1/3 cup extra virgin olive oil
- 1-1/2 to 2 cups chopped onion
- 8 cloves of garlic - minced
- 8 6-oz cans tomato paste
- 2 106 oz cans crushed tomatoes
- 8 6-oz cans water (10 for thinner sauce)
- 8 tsp Italian seasoning
- 2 TBSP sugar
- 14 fresh basil leaves - chopped
- 1 tsp red pepper flakes
- 1 peeled potato
- 4 pounds lean ground beef or turkey meat - sauteed in separate pan, drained.
