Punkin's Green Bean Casserole

Boil green beans until tender (2 to 3 minutes); cool in ice water
- 4 packages frozen green beans
- 1 teaspoon salt
- 1 pint cherry tomatoes
- 1/3 teaspoon thyme
- 3/4 cup soft breadcrumbs
- 1/4 teaspoon pepper
- 1/4 cup minced onion
- 1/4 cup + 2 tablespoons olive oil
- 1 clove garlic
Veal Marsala

Combine flour, salt and pepper
- 1 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 lbs. veal cutlets
- 1/4 cup butter, melted and divided
- 3 tablespoons olive oil, divided
- 1/2 cup dry Marsala
- 1/2 cup beef broth, divided
- 1 clove minced garlic
- 1 teaspoon snipped parsley
- 1 (4 1/2 oz.) can sliced mushrooms, drained (or sauteed fresh mushrooms)
Asian Marinade for Kabobs

In a large bowl, combine ingredients
- Marinade:
- 2 lbs steak tips, flank steak or
- 2 lbs boneless chicken thighs, cut into one-inch chunks or
- 1 lb large shrimp, peeled and deveined
- 2 cloves garlic, roughly chopped
- 1 inch fresh ginger, peeled and roughly chopped
- 1 cup fresh cilantro, roughly chopped
- 1 onipn, roughly sliced
- 1 cup teriyaki sauce
Spinach Salad

- 2 bunches fresh spinach, washed, dried, torn into bite-size pieces and chilled
- 1/2 lb. bean sprouts
- 8 slices bacon, cooked and crumbled
- 3 hard-boiled eggs, chopped or sliced
- 1 small can water chestnuts, sliced OR 1 pint fresh mushrooms
- 1 cup oil
- 1/4 - 1/2 cup sugar
- 1/4 cup vinegar
- 1/3 - 1/2 cup catsup
- 1 teaspoon salt
- 1 tablespoon Worcestershire sauce
- 1 small onion, chopped OR 1 teaspoon minced onion
Potato Chicken Soup

Peel all the potatoes, dice all except 1
- 1 1/4 pound Potatoes
- 1 Cup diced Celery
- 1/2 Cup diced Onion
- 1 12 ounce can Evaporated Skim Milk
- 1 Cup Skim Milk
- 4 ounces 2% Milk Sharp Cheddar Cheese
- 2 Tablespoons All Purpose Flour
- 2 teaspoons Margarine
- 1/2 Cup Fat Free Sour Cream
- 4 Cups Fat Free Chicken Broth
- Salt and Pepper to taste
Banana Bread (Patty's)

Preheat oven to 350 degrees
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon (optional)
- 1/2 teaspoon nutmeg (optional)
- 3/4 cup butter
- 1 cup sugar
- 1 cup brown sugar (dark brown preferred)
- 2 eggs
- 1 1/2 cup bananas, mashed
- 1/2 cup walnuts, chopped (optional)
- 1 teaspoon vanilla
Baked Chicken Tortillas

Preheat oven to 350 degrees
- 1 cup bottle salsa, divided
- 1 (8 oz.) container sour cream
- 6 (10-inch) flour tortillas
- 1 1/2 cups chopped cooked rotisserie chicken
- 1/3 cup chopped tomato
- 1/3 cup chopped green or red bell pepper
- 1/4 cup chopped onion
- 3/4 cup (3 oz.) shredded cheddar cheese
Almond Bear Claws

- 1 (17.3-ounce) package frozen puff pastry sheets, thawed
- 1 (12-ounce) can almond filling
- 1 egg yolk
- 2 tablespoons water
