CHEESECAKE COOKIES

Mix butter, flour, brown sugar and pecans and press into baking dish
- Glaze:
- 1 Stick Butter (Melted)
- 1 Cup Flour
- 1/4 Cup Brown Sugar
- 1 Cup Chopped Pecans
- 16 Ounces Cream Cheese
- 1 Cup Sugar
- 1 Teaspoon Vanilla
- 3 Large Eggs
- 2 Cups Sour Cream
- 6 to 7 Tablespoons Sugar
- 1 Teaspoon Vanilla
Ginger and Honey Glazed Carrots

Directions 1. Line a baking sheet with paper towels
- 6 cups water
- 3 pounds young, small carrots with tops trimmed to 2 inches, peeled or scrubbed, or 3 pounds packaged peeled baby carrots
- 2 tablespoons margarine or butter
- 2 tablespoons honey
- 4 teaspoons minced fresh ginger
- 1/4 teaspoon salt

- Potato Topping:
- 1 1/4 pounds russet potatoes, peeled and cubed
- 2 tablespoons Kerrygold Irish butter
- 1/3 cup milk
- 1/2 teaspoon salt
- 1 cup shredded Kerrygold Dubliner cheese
- Filling:
- 1 pound lean ground beef
- 2 tablespoons Kerrygold Irish butter
- 4 small carrots, peeled and sliced 1/4-inch thick
- 1 medium onion, chopped
- 2 tablespoons flour
- 3/4 cup Guinness Stout
- 3/4 cup beef stock
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 cup frozen, thawed peas
Greek Salad

- 2 tomatoes, cut into wedges
- 4 small Persian or Kirby cucumbers, cut into spears
- 1/2 cup Kalamata or other briny black olives
- 1 red onion, thinly sliced
- 1 pound Greek feta cheese, sliced
- Extra-virgin olive oil, for drizzling
- Coarse salt and freshly ground pepper
