I Stopped buying the jar stuff once I tasted this homemade salsa
- 8 cups tomatoes, peeled, chopped and drained
- 2 1/2 cups onions, chopped
- 1 1/2 cups green peppers
- 1 cup jalapeno pepper, chopped
- 6 garlic cloves, minced
- 2 teaspoons cumin
- 2 teaspoons pepper
- 2 tablespoon Salt*
- 1/3 cup sugar
- 1/3 cup vinegar
- 1/3 cup chopped Italian parsley or Cilantro if you prefer* :)
- 1 (15 ounce) can tomato sauce
- 1 (12 ounce) can tomato paste

- 1 tablespoon white wine vinegar
- 3/4 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 8 ounces uncooked large elbow macaroni
- 2/3 cup fresh green peas
- 2/3 cup finely diced red bell pepper
- 2/3 cup finely diced red onion
- 1/2 cup thinly sliced green onion
- 1/4 cup chopped fresh flat-leaf parsley
- 1/2 teaspoon grated lemon rind
- 3 slices bacon, fat removed, cooked and crumbled
Olive Garden's Chicken Giardino

Sauce Preparation: MELT butter in a sauce pan over medium heat
- Sauce:
- 1 Tbsp butter
- 1/4 tsp dry thyme
- 1/2 tsp fresh rosemary, finely chopped
- 1 tsp garlic pepper
- 1 Tbsp cornstarch
- 1/4 cup chicken broth
- 1/4 cup water
- 1/4 cup white wine
- 1 Tbsp milk
- 1 tsp lemon juice
- Salt and pepper to taste
- Chicken:
- 2 lbs boneless, skinless chicken breasts, sliced width-wise into 1/2” strips
- 1/4 cup extra-virgin olive oil
- 2 small rosemary sprigs
- 1 clove garlic, finely minced
- Juice of 1/2 lemon
- Vegetables:
- 1/4 cup extra-virgin olive oil
- 1/2 bunch fresh asparagus (remove bottom inch of stem; cut remainder into 1” pieces)
- 1 zucchini, julienne cut
- 1 yellow summer squash, julienne cut
- 2 roma tomatoes, cut into 1/2” pieces
- 1/2 red bell pepper, julienne cut
- 1 cup broccoli florets, blanched
- 1/2 cup frozen peas
- 1 cup spinach, cut into 1/2” pieces
- 1/2 cup carrots, julienne cut
- 1 lb farfalle pasta (bow ties), cooked according to package directions

- 3 eggs
- 2 cups granulated sugar
- 1 1/4 cups oil
- 2 cups flour
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1 small jar strained applesauce baby food
- 1 small jar strained apricots baby food
- 1 small jar strained carrots baby food

- 3 cups flour
- 1 Tablespoon baking powder
- 1 teaspoon salt

- 4 ounces cheddar cheese, cut into 1/4 inch cubes
- 1 1/4 cups milk
- 3/4 cup sour cream

- 1 tablespoon vegetable oil
- 1 large onion, chopped (about 1 cup)
- 1/4 teaspoon garlic powder or 1 clove garlic, minced
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Celery Soup (Regular or 98% Fat Free)
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Potato Soup
- 1 1/2 soup cans milk
- 1/4 teaspoon dried dill weed, crushed
- 1/2 pound fresh or thawed frozen medium shrimp, shelled and deveined
- 2 fresh or thawed frozen firm white fish fillets (about 1/2 pound), cut into 1-inch pieces
- Chopped fresh parsley
Chocolate Velvet Mousse

This dessert recipe is easy all done in a blender or food processor
- 2 envelopes unflavored gelatin (Knox)
- 1/2 cup cold milk*
- 1 egg
- 1/8 teaspoon salt
- 3/4 cup milk, heated just to boiling*
- 1/4 cup white sugar
- 1 teaspoon vanilla
- 1 (6-ounce) package semi-sweet chocolate bits (about 1 cup)
- 1 cup heavy whipping cream*
- 1 1/2 cups ice cubes or crushed ice
- You may use 2 1/4 cups half and half in place of the milk and cream.
