- 6 cups apples; sliced and cut into small pieces; preferably a sturdy tart apple like a granny smith or something similar
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 1 teaspoon lemon zest
- 2-3 tablespoons fresh lemon juice
- 2 tablespoons cornstarch
- 4 tablespoons water

- 3 cups flour
- 1 cup cold unsalted butter cut into small cubes (organic is best)

- 1 tbsp. lemon juice
- 2 tbsp. all purpose flour

- 1/3 cup all purpose flour
- 1/3 cup old-fashioned oats (quick cook)
- 1/4 cup granulated sugar
- 1/2 tsp. ground cinnamon
- 1/4 cup butter , softened

TO MAKE THE CRUST: In a medium bowl, whisk together flour, sugar, and salt

- 1 1/4 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup (1 stick, 4 ounces) cold unsalted butter, cut into small chunks
- 1/4 cup plus 1 to 2 tablespoon cold buttermilk
- For the Filling:
