Beef Stroganoff (Pioneer Woman)

FOR THE BUTTERED EGG NOODLES: Bring a large pot of water to a boil
- 12 ounces egg noodles
- 2 tablespoons salted butter
- 2 tablespoons olive oil
- 1 pound sirloin steak, cut into small cubes
- Salt and freshly ground black pepper
- 8 ounces cremini mushroom caps, halved
- 2 carrots, finely chopped
- 1/2 onion, finely chopped
- 1/2 cup brandy
- 2 1/4 cups beef stock
- 2 tablespoons cornstarch
- 1/4 cup sour cream
- 1 heaping teaspoon Dijon mustard
- Chopped fresh parsley, for serving
Pumpkin Muffins (Dr. Oz)

Preheat the oven to 375ºF
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp grated nutmeg
- 3/4 cup plus 1 tablespoon honey (in place of 1 cup sugar)
- 1/2 cup canola oil
- 2 large eggs
- 1/2 can (15 oz) pumpkin puree
- 1/2 cup unsweetened applesauce
Wellesley Fudge Cake (Cook's Country)

1. MAKE BATTER Adjust oven rack to middle position and heat oven to 350 degrees
- CAKE
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup hot water
- 1/2 cup Dutch-processed cocoa powder (see note)
- 16 tablespoons (2 sticks) unsalted butter , cut into 16 pieces and softened
- 2 cups granulated sugar
- 2 large eggs
- 1 cup buttermilk , room temperature
- 2 teaspoons vanilla extract
- FROSTING
- 8 tablespoons (1 stick) unsalted butter , cut in half, and softened
- 1 1/2 cups packed light brown sugar
- 1/2 teaspoon salt
- 1 cup evaporated milk
- 8 ounces bittersweet chocolate , chopped
- 1 teaspoon vanilla extract
- 3 cups confectioners' sugar , sifted

Preheat oven to 375 deg. Prepare baking sheets by lining with parchment paper
- 3 cups (390 grams) all purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup (113 grams) unsalted butter, room temperature
- 1/2 cup (100 grams) granulated white sugar
- 1 large egg
- 2/3 cup (160 ml) unsulphured molasses (To prevent molasses from sticking to the measuring cup, first spray the cup with a non stick vegetable spray.)

- Nonstick vegetable oil spray
- 1 tablespoon natural, unsweetened cocoa powder plus more for pan
- 1/2 cup(1 stick) unsalted butter, cut into 1/2-inch pieces
- 3 ounces unsweetened chocolate, chopped
- 2 ounces bittersweet chocolate, chopped
- 2/3 cup all-purpose flour
- 1 tablespoon instant espresso powder
- 1/4 teaspoon kosher salt
- 2 large eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/3 cup bittersweet chocolate chips

- 10 eggs
- 1 cup sugar
- 2-3 cups flour
- 7 oz. melted, cooled shortening
- 1 envelope yeast
- 1 Tablespoon of either anise, vanilla or lemon extract

- 7 - 8 Frozen Burritos, I used beef & bean
- (completely thawed)
- 1 - 14.5 oz Can Refried Beans
- 1 - 15 oz Can Wolf Brand, Hormel or any
- brand Chili with no beans
- 1 - 10.5 oz Can red enchilada sauce
- 2 - cups shredded cheddar cheese or Monterrey jack cheese blend
- Sour cream (garnish)
- black olives (garnish)
- salsa, optional (garnish)
