Chocolate Egg Cream

- 2 1/2 tablespoons sugar
- 1 tablespoon boiling water
- 1/2 cup lowfat milk, very cold
- 1 1/2 cups seltzer water (not club soda)
- 1 pretzel rod
Stuffed Artichokes

Rinse artichokes well, tugging leaves outward to loosen slightly for stuffing
- 4 medium fresh artichokes
- 2 -3 cups Italian style breadcrumbs
- 2 -3 tablespoons of grated parmesan cheese or 2 -3 tablespoons romano cheese
- 1 tablespoon dried parsley
- 1 teaspoon garlic salt
- 1⁄2 teaspoon fresh ground black pepper
- 1⁄4 cup extra virgin olive oil
- 1 -2 tablespoon extra virgin olive oil (for drizzling)
Creamy Cucumber Salad (Barefoot Contessa)

Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl
- 4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
- 2 small red onions, thinly sliced in half rounds
- Kosher salt
- 4 cups (32 ounces) plain whole-milk yogurt
- 1 cup (8 ounces) sour cream
- 2 tablespoons champagne vinegar or white wine vinegar
- 1/2 cup minced fresh dill
- 1 1/2 teaspoons freshly ground black pepper

- FOR WHOOPIE PIES:

- FOR BUTTERCREAM FILLING:

- 1 1/2 cups (12 ounces) Glace Colored Pineapple Wedges.

- 1 cup pitted dates, coarsely chopped.
- 2 cups currants or dark raisins.
