Instant Pot Egg Roll Bowls

Whisk together Sauce Ingredients and set next to pressure cooker
- 1 Tablespoon Pure Sesame Oil
- 2 Tablespoons Extra Virgin Olive Oil
- 2.5 Tablespoons Fresh Ginger Root minced
- 2.5 Tablespoons Fresh Garlic minced
- 1 stalk Fresh Celery chopped
- 1 pound Ground Pork or Turkey or Chicken
- 1 small can Water Chestnuts optional
- 2 pounds Raw Shrimp chopped
- 3 pounds Coleslaw Mix divided
- 3 Scallions chopped, green and white parts separated
- Sauce
- 7 Tablespoons Sweet/Black Soy Sauce
- 5 Tablespoons Soy Sauce
- 1/4 teaspoon Chinese Five Spice
- 1/2 teaspoon Ground White Pepper
- Wonton Chips
- 1 pkg egg roll wrappers cut into strips
- vegetable or olive oil
Hummus (Barefoot Contessa)

Turn on the food processor fitted with the steel blade and drop the garlic down the feed tube
- 4 garlic cloves
- 2 cups canned chickpeas, drained, liquid reserved
- 1 1/2 teaspoons kosher salt
- 1/3 cup tahini (sesame paste) - found in both dairy and dry specialty foods sections
- 6 tablespoons freshly squeezed lemon juice (2 lemons)
- 2 tablespoons water or liquid from the chickpeas
- 8 dashes hot sauce

directions 1. Preheat oven to 350 degrees F
- 3/4 cup butter, softened
- 1-1/2 cups packed brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 cup all-purpose flour
- 1-1/2 cups quick-cooking rolled oats
- 1 cup graham cracker crumbs
- 2-1/2 cups tiny marshmallows
- 1-1/4 cups semisweet chocolate baking chunks or milk chocolate baking pieces

Add all ingredients to a blender, and blend until smooth
- 1 cup of water
- 1/2 cup of pomegranate juice
- 4 ice cubes
- 1/2 cup of blueberries
- 1/2 cup of raspberries
- 1/2 cup of strawberries
- 1 scoop of blended protein powder…my favorite is Beverly UMP vanilla!
- 1/4 tsp of green tea powder
- 1/4 tsp of cinnamon
Spaghetti Squash Lasagna with Broccolini (Eating Well)

Position racks in upper and lower thirds of oven; preheat to 450°F
- 1 2 1/2- to 3-pound spaghetti squash, halved lengthwise and seeded
- 1 tablespoon extra-virgin olive oil
- 1 bunch broccolini, chopped
- 4 cloves garlic, minced
- 1/4 teaspoon crushed red pepper (optional)
- 2 tablespoons water
- 1 cup shredded part-skim mozzarella cheese, divided
- 1/4 cup shredded Parmesan cheese, divided
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper

- 4 tablespoons/60 ml extra-virgin olive oil
- 3 anchovies, plus extra anchovies, for topping, optional

- 1/2 cup/125 ml pine nuts
- 1/2 cup/125 ml raisins
- 1 bunch escarole, washed, dried and trimmed
Cherry Pie Filling

This recipe for cherry pie filling is best with sour cherries, but sweet cherries will work just fine
- 4 quarts cherries (sour cherries are best, but sweet will work, too)
- 3 cups sugar
- 3/4 cups cornstarch
- 1 cup water
- 1/2 cup fresh lemon juice

Preheat oven to 400 degrees
- 2 cups roughly chopped cauliflower
- 1/4 cup (about 2 large) egg whites
- 1/4 cup whole-wheat panko breadcrumbs
- 2 tbsp. grated Parmesan cheese
- 2 tbsp. shredded part-skim mozzarella cheese
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. salt
- 1/8 tsp. black pepper
