Mint Oreo Icebox Cake

. Make chocolate pudding according to directions on package, using 2 cups of milk
- 1 3.4 oz package chocolate pudding
- 1 3.4 oz package vanilla pudding
- 4 1/2 cups milk
- 3/4 tsp mint extract
- 4 drops blue food color
- 2 drops yellow food color
- 2 15.25 oz boxes mint Oreos
- 1 1/2 cups mini chocolate chips
- 8 oz Cool Whip (or homemade whipped cream)
- chocolate sauce for topping, if desired.
THE RUMCHATA ROOT BEER FLOAT

Or Use Ricura
- 1 part RumChata
- 3 parts A&W® Root Beer
- Combine over ice in a tall glass. Careful: to avoid separation please pour root beer over ice first, then add RumChata to cooled root beer. A&W® Root Beer is recommended as they seem to separate less than other brands.
Crockpot Beef Stroganoff

Cook on Low for 8 hours. Cut up the cream cheese into cubes just before serving and turn crockpot on high
- 2 pounds cubed stew meat
- 2 cans Condensed Golden Mushroom Soup
- 1 largish onion diced
- 2-3 -4 tabls of Worcestershire
- 1/2 cup water
- 8 oz of cream cheese
- couple of dashes of Garlic Salt (1 tsp?)
- couple dashes of Hot Paprika
- In the slow cooker stir in all the ingredients together, (except the meat AND the Cream Cheese). Once combined add the meat and mix together.
Creamy Burrito Casserole

Directions Brown beef and onion; drain
- Ingredients
- 1 lb ground beef
- 1/2 onion, chopped
- 1 package taco seasoning
- 6 large flour tortillas
- 1 can refried beans
- 2 -3 cups shredded taco cheese or cheddar cheese
- 1 can cream of mushroom soup
- 4 ounces sour cream
MUSHROOM CHICKEN AND SAUSAGE CASSEROLE

Brown the sausage with the celery, onion and mushrooms
- 3-4 cups diced cooked chicken
- 1 pound sausage
- 1 stalk celery, chopped fine
- 1 tablespoon onion, chopped
- 1/2 pound mushrooms, sliced
- 8 ounces cream cheese, softened
- 16 ounce bag frozen cauliflower, cooked well and drained
- 8 ounces cheddar cheese, shredded
- Salt
- 1/2 teaspoon pepper
- Paprika, optional
Summer Drink/ Hippie Juice

- 1/3 c. Triple Sec

REESE’S KRISPIE NO-BAKE COOKIES

Melt sugar, corn syrup and peanut butter in a saucepan over medium heat
- 1 cup sugar
- 1 cup corn syrup
- 1 1/2 cup creamy peanut butter
- 4 1/3 cup Rice Krispies
- 1 cup chopped Reese’s Peanut Butter cups, chopped (I used the mini ones and quartered them but you can use any size)
- 1/3 cup semi-sweet chocolate chips
Mini Chocolate Peanut Butter Pies

Preheat oven to 350F. Line a 12 count muffin tin with muffin/cupcake liners
- Graham Cracker Toffee Crust
- 5 whole graham crackers
- 3 tablespoons melted unsalted butter
- 1 tablespoons brown sugar
- 2 tablespoons toffee bits
- Peanut Butter Pie Filling
- 1 cup heavy cream
- 6 ounces cream cheese, room temperature
- 1 cup smooth peanut butter
- 1 cup confectioners' sugar
- 1/2 cup toffee bits
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Chocolate Ganache
- 4 ounces quality semisweet chocolate, chopped (1/2 cup)
- 1/2 cup heavy cream
- Garnish
- 1/4 cup chopped salted peanuts
- 1 1/2 tablespoons smooth peanut butter

Strawberry Cheesecake Salad

1.Place the whipped topping, pudding mix and yogurt into a large bowl
- 1 box (3.4 oz.) cheesecake or white chocolate pudding mix
- 12 oz whipped topping
- 3 (6 oz) containers strawberry yogurt
- 1 lb fresh strawberries, sliced
- 3 bananas, sliced (add just before serving or they brown)
- 3 cups miniature marshmallows (optional)

- 2 lbs lean ground beef
- 1 medium yellow onion, chopped
- 2 15 oz cans stewed tomatoes - regular
- 1 10 oz can rotel tomatoes
- 1 14 oz can pinto beans
- 1 14 oz can ranch style beans
- 1 14 oz can corn kernels
- 2 cups chicken or vegetable broth
- 1 cup water
