Rice Cakes

- Cook rice. When rice is ready scramble eggs
- 1 1/2 cup Jasmine rice
- 3 cups water
- salt to taste
- 5 eggs
- coconut oil for scrambling the eggs
- ham diced small (optional)
- 1/4 cup Bragg Amino Acids
- ground black pepper
- grated Parmesan cheese
- 1 tbsp Agave Syrup (optional)
Deep Dish Peanut Butter Cheesecake Brownies

Preheat the oven to 325ºF and cut a circle of parchment to fit a 9" springform pan
- Brownie Base:
- 1 cup natural peanut butter, smooth
- 1/2 cup maple syrup
- 1 egg
- 2 Tablespoons coconut oil, melted
- 1/4 Teaspoon baking soda
- 6 Tablespoons cocoa powder
- 1 Teaspoon vanilla extract
- Peanut Butter Cheesecake Filling:
- 2 - 8 ounce pkgs cream cheese, softened
- 2/3 cup maple syrup
- 1 cup natural peanut butter, smooth
- 2 Teaspoons vanilla
- Optional Toppings:
- chopped peanut butter cups (I used 7 ounces of peanut butter cups to top my brownies)
- Fudge Sauce:
- 3 Tablespoons maple syrup
- 2 Tablespoons cocoa powder
Gluten-Free Corn Dog Muffins

Blend all of the dry ingredients
- 1 1/2 cups corn meal
- 2 cups brown rice flour
- 1/2 cup tapioca flour
- 2 teaspoon xathan gum
- 1/2 cup honey (or sugar)
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups rice milk (or milk)
- 2 eggs, beaten
- 1/2 cup oil
- 6 hot dogs
Gluten Free Brownies

Pre-heat the oven to 170ºC (325ºF) Gas 3
- 100 g (4 oz) good quality plain chocolate (minimum 70% cocoa solids)
- 100 g (4 oz) unsalted butter
- 150 g (5 oz) dark soft brown sugar
- 150 g (5 oz) caster sugar
- 2 eggs
- 1/4 tsp salt
- 1 tsp vanilla extract
- 150 g (5 oz) ground almonds
- 50 g (2 oz) marshmallows (cut into small pieces)
- 100 g (4 oz) toasted pecans (optional)

Directions 1. Spray a 6 quart slow cooker with cooking spray
- 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
- 1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
- 2 cup (8 ounces) shredded mozzarella cheese
- 1/2 cup (2 ounces) shredded Parmesan cheese
- 1/2 cup julienne cut sun dried tomatoes packed in oil, drained 6 green onions, sliced
- 12 eggs
- 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
