- 1 tbs extra virgin olive oil
- 1 garlic clove
- 1 small yellow onion
- 180 gr Arborio (risotto) rice (1 cup)
- A medium glass of dry white wine
- 150 gr of fresh mixed (or, if you find them, porcini) mushrooms or 75 gr of dried ones
- 1 and 1/2 porcini mushroom stock cubes to be dissolved in 750 ml of water
- 1/2 tbs of butter
- 4 tbsp grated Parmigiano Reggiano

- 300 grams GF flour (100 g superfine brown rice flour, 100 g superfine white rice flour, 100 g tapioca flour/starch)
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 115 grams unsalted butter ice-cold, cut into cubes (1 stick)
- 85 grams spectrum vegetable shortening in small pieces
- 100 grams ice-cold (filtered if possible) water (scant)
- 100 grams white sugar (about 1/2 cup)
- 100 grams water (about 1/2 cup)
- 2 medium very ripe bananas, pureed to a smooth mush (no lumps)
- 815 grams So Delicious Unsweetened Coconut Milk (about 3.5 cups)
- 6 heaping tablespoons GF cornstarch, sifted
- 3 large egg yolks
- 1/2 teaspoon kosher salt
- 75 grams sugar (about 1/3 cup)

- 1/2 cup creamy peanut butter (I use Jif or Jif Natural usually)
- 1 cup sugar
- 1/4 cup firmly packed brown sugar
- 2 eggs
- 1 cup all-purpose gluten-free flour blend (I used Gluten Free Mama’s Almond Blend)
- 1/2 tsp. xanthan gum (omit if your flour blend has xanthan gum already in it)
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1 cup (6 oz.) semi-sweet chocolate chips
- 1/2 tsp. vanilla
Crustless, Gluten Free Pumpkin Pie

Preheat oven to 425 degrees F
- 2 eggs
- 1 can (16 ounces) pumpkin or 2 cups cooked fresh pumpkin (I used fresh pumpkin, hence, the lighter color and fresh pumpkin also provides a much lighter taste in my opinion)
- 3/4 cup granulated sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/8 tsp ground cloves
- 1 2/3 cups evaporated milk (one regular-sized can)
- 1/4 cup gluten-free flour (your choice—your favorite single flour or a mix; sift if needed)
