Blackened Seasoning

Mix together and store in glass jar
- 1 Tbsp sugar
- 4 tsp thyme
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp salt
- 2 tsp pepper
- 1 tsp cayenne pepper
- 1 tsp oregano
- 3/4 tsp cumin
- 1/2 tsp nutmeg
Zucchini patties- no cheese

Put zucchini in colander with 1 tsp salt and let stand 15 minutes
- 2 c grated zucchini
- 1 tsp salt
- 1/3 c flour
- 1 egg
- 1/4 c sliced scallion

Summer Squash and Basil Pasta

- 1/4 c evoo
- 8 garlic cloves, sliced
- 2 pounds summer squash, quartered lengthwise and sliced

- 1/2 c parmesan, grated

- 12 large eggs, lightly beaten or pint of egg whites
- ½ cup sour cream
- 1 teaspoon kosher salt
- ¾ teaspoon freshly ground pepper
- 1/3 cup chopped fresh basil leaves
Thai Basil Eggplant

To Prepare the Eggplant: Cut off the top and bottom tips
- 1 large Italian eggplant , or 2 medium Japanese or Chinese eggplants
- 1 green bell pepper , thinly sliced
- 1 red bell pepper , thinly sliced
- 1 yellow bell pepper , thinly sliced
- 1 white onion , halved and thinly sliced
- 14 oz firm tofu , block
- 2 cloves garlic , minced
- 4 tbsp cooking oil

- 4.5 tbsp hoisin sauce
- 1/2 cup tamari sauce
- 1/4 cup water
- 2 teasp chili sauce
- 2 teasp corn starch
