Gluten-Free Carrot Cake with Cream Cheese Frosting Recipe

Preheat oven to 350° F / 176° C Use two round 9-inch cake pans, one 9x13 pan or 36 muffin cups for this recipe
- 2 cups sugar
- 4 eggs
- 1 1/2 cups light olive oil OR your favorite vegetable oil
- 2 cups all-purpose gluten-free flour mix (see notes)
- 2 teaspoons baking soda
- 2 teaspoons gluten-free baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup chopped nuts
- 3 cups freshly grated carrots
- 4 tablespoons unsalted butter
- 3 ounces cream cheese
- 1 teaspoon vanilla extract
- 2 1/2 cups gluten-free powdered sugar (See note)

- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 3 tablespoons margarine, melted
- 4 (8 ounce) packages Philadelphia Cream Cheese, softened
- 1 cup sugar
- 3 tablespoons flour
- 1 tablespoon vanilla
- 1 cup sour cream
- 4 eggs
Wesson Oil Cake

Mix all dry ingredients together; add Wesson oil, milk, eggs and vanilla
- 2 Cups flour
- 2 Cups sugar
- 1/2 Cup cocoa
- 1/2 Teaspoon salt
- 3 Teaspoons baking soda

- 1 Cup milk
- 1 Cup hot water

- 3/4 Stick soft oleo
- 1 Teaspoon vanilla

- 3 Cups powdered sugar
- 3/4 Cup pecans

Beef and Blue Cheese Stuffed Peppers

Cut the tops from the peppers and remove the seeds and membranes
- 4 large red or green bell peppers
- 4 green onions
- 1 medium clove garlic
- 1 pound ground beef
- 1 cup cooked rice
- 1/3 cup tomato sauce or ready-made pasta sauce
- 1/2 tsp dried mint
- 1/2 tsp dried oregano
- 4 oz blue cheese diced
- 2 cups beef stock
Mexican-Style Pork Stew

Heat 2 tbls of oil in the cooker and brown the pork in 3-4 batches
- 4 to 6 tsp olive oil
- 2 1/2 pounds of pork shoulder cut into 1 1/2 inch cubes
- 1 cup coarsely cut onion
- 2-8 jalapeño or other fresh chili peppers, seeded and cut into thin strips
- 1 14 oz can tomatoes, coarsely chopped, including juice
- 1/4 cup chicken stock
- 1 tsp minced garlic
- 2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp dried oregano
- salt to taste
- 1/2 tsp freshly ground pepper
- 1 cup sliced pimento-stuffed green olives
- 1/2 cup crushed pineapple
- 1/2 cup prunes, sliced into 1/4 inch strips
- 2 tbls all purpose flour mashed into 2 tbls butter
Pot Roast - Pressure Cooker

I was looking for a Pot Roast recipe for my pressure cooker
- 1 (3 -4 lb) boneless chuck roast
- 2 garlic cloves, crushed
- 1 tablespoon oil
- 1 small onion, peeled and chopped
- 1/2 cup beef broth (I'll substitute chicken broth)
- 1 (4 ounce) can tomato paste
- 1/2 cup water
- 2 tablespoons brown sugar
- 1/2 teaspoon dry mustard
- 1/4 teaspoon sweet paprika
- 1/4 cup lemon juice
- 1/4 cup cider vinegar
- 1 tablespoon Worcestershire sauce
- chopped parsley (optional)

- 1 Medium Chopped Onion
- 2 Cloves minced Garlic
- 1 Pound ground beef or turkey
- 1 Tablespoon chili powder
- 1 Teaspoon ground cumin
- 1/2 Teaspoon cayenne pepper
- 1 6 ounce can tomato paste
- 1 28 ounce can crushed tomatoes
- 1 14 ounce can beef or vegetable broth
- 1 16 ounce can kidney beans, drained
- 1 16 ounce can pinto beans, drained
- 1 16 ounce can black beans, drained
Mango Salsa

Fresh mango salsa is easy to make and perfect with halibut or salmon or as the salsa in fish tacos
- 1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
- 1/2 medium red onion, finely chopped
- 1 Jalapeño chile, minced (include ribs and seeds for a hotter taste if desired)
- 1 small cucumber, peeled and diced (about 1 cup)
- x 3 Tbsp fresh cilantro leaves, chopped
- 3 Tbsp fresh lime juice
- Garlic salt and pepper to taste
