1. Combine refried beans with taco seasoning and blend well
- 1 can (16 ounce) refried beans
- 1 packet (1.25 ounce) taco seasoning mix
- 1 1/2 cups prepared guacamole
- 1 cup sour cream
- 2 Tablespoons chopped fresh cilantro
- 1 Tablespoon lime juice
- 1 cup salsa
- 1/2 cup each shredded Monterey Jack and Cheddar cheese
- 1 can (4 ounces) sliced black olives - drained

- 1/4 Cup Extra Virgin Olive Oil

- tsuyu Dipping Sauce:
- 1/4 cup vegetable stock, or Dashi if you have it
- 1 tablespoon sugar
- 1/4 cup low sodium Tamari
- 1 tablespoon rice vinegar
- 1/4 cup water
- Vegetables:
- 1 stalk broccoli, florets only
- 2 carrots, sliced on the bias, 1/4″ thick
- 1 cup mushrooms, your favorite
- 1 cup sugar snap peas or green beans
- (Feel free to use any vegetables you like!)
- Tempura Batter:
- 1 cup cold water (very cold!)
- 1 cup flour
- 2 pinches salt
- 1/4 teaspoon baking powder
- 1 tablespoon Ener-g Egg Replacer Powder mixed with 3 tablespoons water

- 2 tablespoons cornstarch
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows

In a skillet over medium-high heat, heat the sesame and canola oil
- 2 tablespoons sesame oil
- 2 tablespoon canola oil
- 1/2 head green cabbage, shredded
- 1 cup julienne carrots
- 1 cup julienne snow peas
- 1 tablespoon corn starch
- 1/4 cup soy sauce
- 8 egg roll wrappers
- Peanut oil, for deep frying
- 1/4 cup dry mustard
- 1/4 cup water
- Cilantro leaves, garnish
Jambalaya, Cajun Green Beans

In a large saute pan over medium low heat, add 1 tbs
- Jambalaya
- 3 tbs. olive oil, divided use
- 1 block of extra-firm tofu, cut into small cubes
- 1 tbs. tamari
- 6 oz. soyrizo (half a package)
- (or use 6 oz. soaked tvp, plus 1 tsp. cumin, 1 tbs. of tamari)
- 1 onion, small dice
- 3 cloves of garlic, minced
- 1 tsp. sea salt
- 1/2 tsp. black pepper, freshly ground
- 1 tsp. herbes de provence
- 1 tsp. smoked paprika
- 1/2 tsp. cayenne
- 2 cloves, freshly ground
- 1 cup of basmati rice
- 1 1/2 cups of veg stock
- 2 tbs. parsley (for garnish)
Buttermilk Tofu, Smoked Sweet Potato Fries, Grilled Okra

Dry Ingredients 1/2 cup breadcrumbs 1/2 cup flour 1/4 cup nutritional yeast 1 tsp
- Buttermilk Tofu
- Tofu
- 1 block of extra-firm tofu portioned into 8 cutlets
- 1 tbs. tamari
- smoker box with hickory chips (optional)
- Put the tofu cutlets on a plate, pour the tamari over the top, flip to coat both sides -- set aside for 10 minutes. Then, optionally, smoke the tofu for 25 minutes (we used hickory chips). Remove from the smoker box and let cool.
- Wet Ingredients
- 1/2 cup soy/rice/almond milk
- 1/2 cup smoked cashew/macadamia cream sauce*
- 1 tbs. white balsamic vinegar
- salt & pepper to taste
- (or just use one cup total of soy/rice/almond milk)
