Preheat the oven to 400°F
- COOKIES:
- 1/3 cup (5-1/3 tablespoons) unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 cup granulated sugar
- 1 large egg
- 1-1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup milk
- ICING:
- 2 cups semisweet chocolate chips
- 1-1/2 tablespoons (1 ounce) light corn syrup
- 1 teaspoon vanilla extract
- 3/4 cup (6 ounces) heavy cream
- 1-1/2 cups confectioners' sugar, sifted
- 1/8 teaspoon salt
Pina Colada Fluff

Bring that tropical feeling home with Pina Colada Fluff! An incredibly easy and delicious dessert salad!
- 1 3.4 3.4 oz vanilla instant pudding mix
- 1 20 20 oz can crushed pineapple (do not drain!)
- 1 8 8 oz container Cool Whip (I used lite) - thawed
- 1 tsp rum extract
- 2 cups miniature marshmallows
- 1 cup shredded sweetened coconut
- ½ cup chopped nuts (your favorite)

Heat the Roasted Vegetable Vinaigrette (recipe below)in a small saucepan
- 3/4 cup Roasted Vegetable Vinaigrette (recipe follows)
- 1-1/2 cups torn frisée
- 1-1/2 cups torn radicchio
- 1-1/2 cups torn arugula
- 1-1/2 cups baby spinach leaves
- 12-18 Belgian endive spears
- 12 grilled red onion slices
- 3/4 cup crumbled blue cheese
- 6 Tbsp toasted pine nuts

- 1 (6 oz) Nilla Wafer or Graham Cracker crust (I prefer the store bought)
- 2 boxes (3.4 oz each) pistachio instant pudding mix
- 2 cups half and half milk
- 1 bar (8 oz) cream cheese, softened
- 1/3 cup granulated sugar
- 1 tub (8 oz) Cool Whip, thawed
- Chopped pistachios (for garnish)

To make the crust, combine the flour, sugar, lemon zest, and salt in a food processor and pulse to blend
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar, plus 2 tablespoons
- 1 lemon, zested and juiced
- 1/4 teaspoon kosher salt
- 10 tablespoons unsalted butter, chilled and cut into 1/2-inch pieces
- 3 tablespoons ice water
- 5 cups frozen mixed berries, thawed (about 30 ounces)
- 1 1/2 tablespoons cornstarch 2/3 cup mascarpone cheese
- 1/3 cup heavy cream
- 3 tablespoons honey

Bring a large pot of salted water to a boil
- 1 cup whole milk ricotta cheese
- 1 pound frozen spinach, thawed and squeezed dry
- 1 cup grated Parmesan
- 2 eggs
- 2 egg yolks
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 5 tablespoons all-purpose flour, plus 1 cup for coating 1 jar store bought marinara sauce, heated

- 3 oz. Cream Cheese
- 1/2 cup shortening (you can also substitute butter in the same amount, but I've always used shortening.)
- 1/2 cup sugar
- 1 egg yolk
- 1 cup sifted flour
- 1/4 tsp. kosher salt
- 1/2 tsp.vanilla
