Banana Bread

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 4 overripe bananas
- 1 cup sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled

- 1 teaspoon pure vanilla extract
- 1/2 cup pecans, finely chopped

Beef Stroganoff

Cook noodles and drain (call me and I will tell you how to keep warm)
- 1-2 lbs of hamburger meat (92-93% lean)
- 1 bag of wide noodles
- 1 container of sour cream
- 1 can cream of mushroom soup
- 1 can mushrooms (4 oz) but I use one container of fresh
- 2 cloves of garlic (but I love garlic and always add more)
- 1 large onion
- 1/3 stick Parkay (or butter)
- 2 T flour
- salt and pepper to taste
Strawberry Martini

Muddle strawberries with the sugar until mushy and a bit of liquid has developed
- 4 strawberries, stemmed and hulled
- 1 Tbsp superfine sugar
- 3 shots vodka
- 1/2 shot triple sec (optional)
Chicken Thighs with Olives and Tomato Sauce

- 12 chicken thighs (about 4 pounds), skinned
- 1 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1 teaspoon olive oil
- 1 1/2 tablespoons minced garlic
- 1/4 cup dry white wine
- 3 tablespoons tomato paste
- 2 to 3 teaspoons crushed red pepper
- 1 (28-ounce) can diced tomatoes, drained
- 1/4 cup sliced pitted kalamata olives
- 2 tablespoons chopped fresh flat-leaf parsley
- Add capers along with the olives, parsley, and seasoning for a more briny flavor, if you like. The parsley goes in last to keep its flavor and color intense

- 1 tablespoon butter
- 1/2 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1 (4 ounce) can diced green chiles
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups cubed cooked chicken breast meat
- 1 cup shredded Cheddar cheese, divided
- 6 (12 inch) flour tortillas
- 1/4 cup milk
Spicy Shrimp Tacos with Grilled Tomatillo Salsa

1. Preheat grill. 2. To prepare salsa, remove husks and stems from tomatillos
- Salsa:
- 1/2 pound tomatillos
- Cooking spray
- 2/3 cup chopped green onions (about 4 green onions)
- 1/4 cup chopped fresh cilantro
- 3 tablespoons lime juice (about 1 lime)
- 1/4 teaspoon salt
- 1/2 jalapeño pepper, seeds removed and chopped
- 1 garlic clove
- Tacos:
- 1 pound medium peeled and deveined shrimp
- 1 tablespoon hot pepper sauce (such as Tabasco)
- 1/2 teaspoon ancho chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 8 (6-inch) corn tortillas
- 2 cups shredded cabbage
- 1 cup shredded carrot

In a skillet brown the hamburger meat and cook the onions
- 1 lb hamburger meat
- 2 cans chili beans
- 1 can red kidney beans
- 2 cans diced tomatos
- 1 packet chili seasoning
- 3 chopped whole dill pickles
- 1 choped onion
- cayenne pepper to taste (optional)
- cheddar cheese for topping
Chicken Marsala

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly
- 1/2 cup all-purpose flour
- 1 tablespoon Essence, recipe follows
- 2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
- 1 tablespoon olive oil
- 4 tablespoons butter
- 3 cups sliced mushrooms (cremini, oyster, shiitake)
- 3/4 cup Marsala
- 1 cup chicken stock
- Salt and freshly ground black pepper
- Chopped chives, for garnish
