Spaghetti and Meatballs

For the meatballs: Heat 2 tablespoons of the oil in a small saute pan over medium heat
- 2 tablespoons, plus 1 cup pure olive oil
- 4 cloves garlic, finely chopped
- 2 large eggs
- 1/4 cup finely chopped fresh flat-leaf parsley
- 1/2 pound ground chuck
- 1/2 pound ground veal
- 1/2 pound ground pork butt
- 1/4 cup freshly grated Parmesan
- 1/4 cup dried bread crumbs (made from fresh white bread)
- Salt and freshly ground black pepper
- 1/4 cup pure olive oil
- 2 medium Spanish onions, finely chopped
- 4 to 6 cloves garlic, rubbed to paste
- 1 teaspoon red chili flakes
- 1/4 cup tablespoons tomato paste
- 4 (28-ounce) cans plum tomatoes and their juice, mashed up with a whisk
- 2 small Cubano peppers, whole, with some knife slits
- 16 sprigs fresh flat-leaf parsley
- Salt and freshly ground black pepper
- 1 pound (number 8 or 9) spaghetti, cooked al dente
- 3 tablespoons freshly chopped basil leaves
- Wedge Parmigiano-Reggiano
- Fresh parsley sprigs, for garnish
Neely Potato Dog Skins

HEAT grill to medium heat
- 3 large baking potatoes (2-1/2 lb.), baked
- 2 cloves garlic, minced
- 2 Tbsp. butter, melted
- 3 OSCAR MAYER Selects Premium Beef Franks
- 1/3 cup BULL'S-EYE Original Barbecue Sauce, warmed
- 1/2 cup KRAFT Shredded Colby & Monterey Jack Cheeses
- 1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup chopped fresh chives
Philly Cheese Steak Stromboli

Preheat the oven to 375 degrees F
- 1 pound beef rib steak, sliced thin
- Salt and freshly ground black pepper
- All-purpose flour, for rolling dough
- One 16-ounce ball pizza dough
- 2 cups shredded mild cheese blend, such as provolone, mozzarella and Parmesan
- 1 cup tomato sauce (gravy)
- 1 tablespoon minced fresh parsley
- 2 eggs, beaten, for egg wash
Twice-Baked Potatoes

Preheat the oven to 400 degrees F
- 8 baking potatoes, washed
- 3 tablespoons canola oil
- 2 sticks salted butter
- 1 cup bacon bits (fry your own!)
- 1 cup sour cream
- 1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
- 1/2 cup whole milk
- 2 teaspoons seasoned salt
- 3 green onions, sliced
- Freshly ground black pepper
Ginger Wings with Peanut Dipping Sauce

For the dipping sauce: Combine all the ingredients in a small bowl and whisk well to combine
- 1 cup chunky peanut butter
- 1/2 teaspoon grated ginger
- 2 teaspoons sesame oil
- 2 teaspoons soy sauce
- 1/4 cup hot water
- 2 tablespoons rice wine vinegar
- 2 tablespoons chopped fresh cilantro
- Canola oil spray
- 3 tablespoons Thai hot sauce
- 3 tablespoons low-sodium soy sauce
- 3 tablespoons grated ginger
- 3 cloves garlic, minced
- 3 tablespoons sesame oil
- 2 tablespoons sesame seeds
- 3 tablespoons hoisin sauce
- 3 pounds chicken wings, split at the joint, tips removed and discarded
- Chopped green onions, for garnish

Spicy Pop Pulled Pork

- 2 onions, peeled and quartered
- 1 whole pork butt (pork shoulder roast)
- Salt and freshly ground black pepper
- One 11-ounce can chipotle peppers in adobo sauce
- 2 cans pop (I use Dr Pepper)
- 4 packed tablespoons brown sugar
Twice Baked Potatoes

- 4 medium russet potatoes, scrubbed well
- 1/2 cup green onions, white and green parts, chopped
- 1 clove garlic, chopped
- 4 slices good quality bacon, cooked and crumbled
- 2 1/4 cups Cheddar, divided
- Salt and freshly ground black pepper
- 2 cups sour cream
