Roasted Carrot and Ginger Soup

Directions Preheat oven to 425F (220C)
- 2 pounds carrots, peeled and cut in smaller pieces
- 1 medium onion (about 1 cup), chopped
- 1 head garlic, roasted
- 1/4 cup olive oil, divided
- 6 cups vegetable stock
- 2 tbsp fresh ginger, grated
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 tsp ground cumin
THAI CHICKEN VEGETABLE CURRY

In a medium sized pot, add 1 tablespoon of vegetable oil
- 1 tablespoon vegetable oil
- 2 cloves garlic thinly sliced
- 1/2 cup yellow onion thinly sliced
- 1 1/2 cups bell pepper thinly sliced in 3 inch long strips
- 1 1/2 cups mushrooms sliced
- 8 ounces chicken breast sliced into 1/2 inch by 2 inch strips
- 11 ounces red curry sauce (1 bottle from Trader Joes)
- 13 1/2 ounces coconut milk I recommend Chaokoh brand
- 1 cup sweet potatoes 1/4 inch slices
- 1 cup carrot cut on a bias
- 2 cups zucchini cut on a bias
Rich Indian Chicken Curry

This rich gravy is a crowd pleaser at any party
- Ingredients:
- 10 chicken thighs, skinned and washed
- 3 onions minced to a paste
- 2 tbsps tomato puree
- 2 tbsps cream
- salt to taste
- 1 tsp ginger garlic paste
- 4 tbsps curd/yoghurt
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp Shan's achari powder (achari in hindi means pickle which is a mix of fennel, nigella seeds, fenugreek leaves, chilli, coriander, black pepper, ginger, cardamom, cumin, cinnamon, bayleaf, etc.)
- Note: If you do not have achari powder, you can substitute it with this combination. I have added a few of the "must add" parts of the achari powder.
- 1/2 tsp chilli powder
- pinch of nigella seeds
- pinch of fennel seeds
- 1 bay leaf broken into small pieces
