- 3 cups rice( Arborio)
- 1 teaspoon salt
- J finely chopped onion
- 2 tablespoons olive oil
- 1/2 pound ground beef

- 1/4 cup white wine
- 1 teaspoon rosemary
- 3 large eggs, separated
- 1 3/4 cup grated cheese....pecorino or romano

- 3 tablespoons vinegar
- 6 dashes hot sauce
