Stir together ricotta, fontina, ¼ cup (60 mL) of the Parmesan cheese, eggs, parsley and salt
- Basic White Sauce:
- 1 lb (454 g) ricotta cheese
- 1 cup (250 mL) shredded fontina cheese
- 1/3 cup (75 mL) grated Parmesan cheese

Minty Mojito

Combine the rum, Simple Syrup and lime juice in the punch bowl and mix well
- 4 cups light rum
- 1 cup mint-flavored Simple Syrup, cooled (recipe below)
- 1/2 cup fresh lime juice, preferably from Key limes
- 6 cups crushed ice
- 2 cups chilled sparkling water
- 1 cup loosely packed mint sprigs, plus more for garnish
- 3 limes, preferably Key limes, thinly sliced
