Crockpot Chicken & Ham Gumbo

1. Cut chicken into bite size pieces
- 1 1/2 lbs. boneless skinless chicken thighs
- 1 T oil
- 10 oz frozen okra
- 1/2 pound smoked ham
- 1 1/2 cups chopped onion
- 1 1/2 cup chopped green peppers
- 2 or 3 10 ox cans cannellini beans
- 6 cups chicken broth
- 2 10 oz cans tomatoes with green chillies
- 1/2 cup brown rice
- 2 T fresh cilantro
Cobbler, Strawberry Rhubarb

Preparation: Preheat the oven to 350°F
- Fruit Mixture:
- 4-1/2 cups rhubarb
- 1-1/2 cups strawberries
- 1/2 cup white sugar
- 2 Tbsp. quick-cooking tapioca
- 1 tsp. of grated orange peel
- Cobbler crust:
- 2 Tbsp. white sugar
- 1 cup all-purpose flour
- 1-1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup butter
- 1/4 cup milk
- 1 egg, lightly beaten
Irish Soda Bread

Breadmaker
- 1 1/2 T vinegar
- 1 1/2 cups skim milk
- 1 1/2 T canola oil
- 1/3 Cup raisins
- 3 T sugar
- 1 t salt
- 3 T caraway seeds
- 1 7/8 cup bread flour
- 1 1/2 cup whole wheat flour
- 2 1/2 t yeast
- 2/3 cup raisins
Impossible Pumpkin Pie

Heat over to 350, grease pie plate, Beat all ingredients until smooth, 1 minute in blender on high
- 3/4 cup sugar
- 1/2 cup bisquick
- 2 T butter
- 1 can pet milk
- 2 eggs
- 1 can 16oz. pumpkin
- 2 1/2 t pumpkin pie spice
- 2 t vanilla
- 1/2 c chopped pecans [optional]
Tuna/Salmon Patties

Combine all and mix well. Heat oil in frypan and drop by spoonfuls, Fry until hot and golden brown
- 1 c mashed potatoes
- 1 6oz can tuna
- 1 T parsley
- 1 T onion
- 1 egg
- season to taste
Zucchini Soup

Cook and stir onion in margarine in 2 quart saucepan until tender
- 1 small onion, chopped
- 1 T margarine
- 2 cups chicken broth
- 2 small zucchini, chopped
- 1 can whole kernel corn, drained
- 2 T green chilies, chopped
- 1/2 t salt
- 1/8 t pepper
- 1 cup milk
- 2 ounces monterey jack cheese, cubed
- Ground Nutmeg
- Snipped Parsley
