Roast with Red Gravy
By rhongaut
Stuff roast with garlic and salt and pepper roast
- 2-3 lb. Eye of Round Roast
- 3 garlic cloves
- 2 Tbs. vegetable oil
- 1 onion, chopped
- 2 Tbs. Italian Seasoning
- 2 cans tomato sauce (15 oz. cans)
- 1/2 cup water
- 1/2 cup bell pepper, chopped
- salt and pepper to taste
Avgolemono

Bring chicken stock to a boil, then place chicken in boiling broth
- 2 Q chicken stock
- 1 to 1.5 lbs chicken breasts (about 4 large pieces)
- 1/2 cup long grain rice
- 2 cups milk
- 2 tbsp cornstarch
- 3 eggs
- 1/4 cup butter
- chopped parsley
- 1/2 cup fresh lemon juice (about 1 small lemon)
Panzella

Heat the oil in a large saute pan
- 3 Tbs. good olive oil
- 1 small French bread, cut into 1" cubes (6 cups)
- 1 tsp. Kosher salt
- 2 large, ripe tomatoes, cut into 1" cubes
- 1 hothouse cucumber, seeded and sliced 1/2" thick
- 1 red bell pepper, seeded and cut into 1" cubes
- 1 yellow bell pepper, seeded and cut into 1" cubes
- 1/2 red onion, cut in half and thinly sliced
- 20 large basil leaves, coarsely chopped
- 3 Tbs. capers, drained
- Vinaigrette
- 1 tsp. finely minced garlic
- 1/2 tsp Dijon mustard
- 3 tbs. Champagne vinegar or French Wine Vinegar with
- Tarragon
- 1/2 cup good olive oil
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
Greek Salad
By rhongaut
Dice all ingredients and arrange attractively on plates
- lettuce
- 1 red bell pepper
- 1 yellow bell pepper
- 1 purple onion
- greek olives (green/purple)
- (also, any other salad ingredients you'd like, but the above ones are common in greek salads)
- 1 pkg feta (pref. President)
- olive oil (with spices, if without, add basil, etc.)
- white wine vinegar
Picnic Slaw (Cole Slaw)

Combine cabbage, onions, bell pepper and drained pimento in a container with a tight-fitting lid
- 1 lg. head cabbage, shredded
- 2 large onions, chopped
- 2 large bell peppers, chopped
- 1 small jar chopped pimento, drained
- 1 cup sugar
- 1 cup whit vinegar
- 3/4 cup vegetable oil
- 2 T. sugar
- 1 T. salt
- 1 T. celery seed
Gooey Butter Cake

- 4 eggs
- 1 box Duncan Hines Butter Recipe Golden Cake Mix
- 1 stick butter, melted
- 8 oz. cream cheese, softened
- 1 tsp vanilla extract
- 3 cups confectioners sugar

- 1/3 cup worcestershire sauce
- 1 T garlic and herb seasoning
- 3 T red wine vinegar
- 3 T olive oil
